Boiled the leftover-leftovers from the Costco chicken and combined with some white beans in the instant pot for chili verde. There are several lunches worth of leftovers plus a little extra broth, which we already have plans to use.

I made pizza rolls in the air fryer and don't regret it one bit. I had a crazy busy weekend and decided to just eat what was in the freezer instead of going out.

I'm trying to eat less meat, and I've been experimenting with TVP to figure out the best way to prepare it. This week I used it to make sloppy joes, following this recipe:

I decided to not eat pizza roles and make a chicken pesto pasta salad that I made last week. It was pretty good, I did add a little bit of olive oil and red whine vinegar to make it less dry.

I came home to a delicious meal of pork mince and adzuki beans and hokkein noodles. It was awesome.

I just made marinated adzuki beans (ACV, olive oil, tamari, toasted sesame seeds, thinly sliced scallions) and ate it over brown rice with some salty sesame crackers and have to say, it was freaking delicious.

My favorite salad-arugula, beets, feta, dried cranberries, pecans, chopped chicken, balsamic vinaigrette green scallions, and pickled onions. Mmm.

@couponvan - that salad sounds delicious.

We almost let some food spoil due to a power outage, as I wasn't sure I'd get a chance to use up the rotisserie chicken that needed using last night. However, I found a stove top recipe that we could make work (and, use a lighter on our gas stove). I ended up making an easy one pot recipe: diced rotisserie chicken, rice, salsa, chicken broth, black beans & chili powder. Let that all cook until the rice is tender (20 minutes or so). Add cheese. Stir, and then top with green onions. We have a ton of green onions in the garden, so that worked out well.

So proud of myself last night. I worked out after work and due to some not great planning on my behalf lunch was just yoghurt and some apple sauce. I was hungry on the way home. But I didn't stop and devour a kebab (tram stops right beside my favourite kebab place).

I went home and had a really good, massive sandwich with cheddar cheese, tomatoes and piles of the already cooked chicken that was in the fridge. It was so good. I love tomato season. And having things in the fridge that can just be eaten.

It doesn't take much more time to make real macaroni and cheese . . . but tastes so much better (and I suspect is better for you), so it's hard to get excited about Kraft any more.

I like you, @couponvan - but that's just a hard freaking pass for me. I really dislike canned corn, and am not a warm tuna fan. If I ever see you IRL, don't make that, I beg of you! ;-)

It's the rare food that tastes better when reheated.

It was also one od the things we would stock up on, on return visits to the US.  Nothing like it in Ireland, unless you want to pay "foreign delicacy" prices for the real thing, imported.
