I think I'm trying a stuffed acorn squash recipe tonight. It looks good, and seasonally appropriate.

Turkey pot pie. I saved a couple cups of yesterday’s batch of turkey stock (the rest became last night’s turkey noodle soup), and I still have half of the pie dough from the batch I made on Wednesday.

We've got a bunch of fall garden produce to use, so I'm making a roasted vegetable sheet pan dinner with cashew tarragon gravy.

And I have a surplus of turnips and greens, so I'm going to try to make a vegan version of southern turnip greens.

"Not exactly colcannon" with roasted squash wedges on the side.

(Cooked and then mashed potatoes, shredded and cooked cabbage, mixed together with a pound or so of sharp cheddar and a bit of salt, then dumped back into the giant frying pan I used to cook the cabbage and fried until crispy on the bottom. Normal people might use a cast-iron skillet and flip the thing onto a plate, but I'm feeding two teenagers, so I stuck the pan under the broiler, because I have't really figured out how to flip the contents of an 18-20 inch diameter pan.)

We're having chicken enchilada rice skillet, with sour cream, cilantro, guac & chips on the side. At least one of the teenagers will also likely have his wrapped in tortillas

Making a salmon loaf. Kind of like a meat loaf with canned salmon from Costco, celery, onions, Ritz crackers, egg and some cream of mushroom soup, spices.

Then, I am making some roasted veggies: bok choy, radicchio, onions and potatoes.

It is a rainy, windy day here and I hope this stuff can get cooked and we don't lose electricity!

Something different: it's an old eating well recipe of ham, sweet potatoes, and apples, mostly: warm some cider with chopped ginger, some sprinkles of cloves, and a spoonful of mustard. Add thinly sliced sweet potatoes, and simmer. Add thinnish apple slices. Put ham slices on top, and cover and cook until the sweet potatoes are cooked through and everything's hot. Dissolve an appropriate amount of cornstarch in a little water, stir in, then cover again and cook until liquid is somewhat thickened.

It's very "fall".  We had it with a salad.

Just make it into a soup and then freeze it for later.  The boiling will kill any pathogens that are taking hold.

Tonight I stirfried some sirloin with garlic, ginger, tamari and a bit of honey, plus onion, celery and a little broccoli. Served over turmeric cauliflower rice.

Tomorrow I'm making split pea soup inspired by all the talk a week or two ago on this thread about split pea soup. I have some smoked pork jowl and there will be lots of carrots and butter involved.

Our CSA gave us quite a bit of greens in the past couple weeks, so I made some saag tofu tonight. Turned out well! Everyone in the family except for the 4-year-old liked it, and he barely likes anything these days.

Home alone tonight, so a couple of frozen Aldi meat pies will be reheated.  About $2 for dinner, and one I really enjoy occasionally.

I'm not sure either, but we have tons of fall garden produce that needs to be used -- cabbage, turnips, carrots, squash.  Gotta find some ideas.

Carrots and cherrie tomatoes baked in the oven, on a bit of yoghurt. And scampi cooked with garlic, chilipepper and tomatoes.

I "made" a baked sweet potato (my go-to toppings are a drizzle of olive oil and Cajun seasoning).

I also had a bag of spinach to use up before tomorrow, and some milk to use before Saturday, so I made creamed spinach for the first time - I ate a little, but put most in the freezer to go with a future meal.

Husband has been requesting homemade macaroni and cheese for a while. Tonight's batch was very good. I served it with baked chicken and blanched broccoli.

our pizza dough suffered a catastrophic failure this afternoon (old yeast meant it didn't rise enough but ALSO it got attacked by ants while trying to rise. I hate ants).  So we're having leftover lentil soup. And I'm not sad about that. 

Pizza tomorrow, using fresher yeast.  We are trying a new topping scheme for one of them, a riff off of "cacio e pepe" pasta. Includes tallegio, mozzarella and parmesan, and heavy cream as the base (!) as well as lots of pepper, presumably....

I made chipotle butternut squash quinoa salad from Budget Bytes -- https://www.budgetbytes.com/chipotle-butternut-squash-and-quinoa-salad/.  I add dried cranberries to it for a little extra zing. 

That one's a winner -- we make it two or three times a month when squash is in season.  Its vegan (for DH) and everyone in the family likes it.   It's light but filling -- good for lunch on its own, or as a side for dinner.

I've decided that we have to move things out of the freezer. So, I think I'll defrost a bolognese sauce, and we'll have that over pasta (or cauliflower rice)

A big Tuscan-inspired bean and sausage soup.  One pound of spicy Italian sausages, white beans, chick peas, onions, garlic, carrots, red pepper, spinach and herbs.  It will feed us for 3 days.

We were intending to have my BIL (who is local) to dinner, and have spatchcocked grilled chicken and a bunch of vegetables while he made latkes. He bailed, so I roasted the chicken, roasted the cauliflower that needed using in the chicken drippings, and baked the potatoes (and some sweet potatoes, too).

Last night: an In & Out inspired sloppy joes recipe, on a bun for some, over cauliflower for the keto eater.
Tonight: we received three free meal kits from a delivery company, as something got screwed up on an order. I've never tried the service before, but the meals look pretty good. Tonight looks like it will be meatball pita pockets with a kale salad & tahini dressing

The Smitten Kitchen sausage, potato, and shallot sheet pan bake, which is then dumped over (er, "elegantly mixed into") a bowlful of arugula with lemon  juice squeezed over.

Last night was broccoli quesadillas, which turned out to not quite be enough, so we had pear cloufouti an hour or so later.

Beanburgers -- 1 pound hamburger, 2 cans of pork and beans, huge squirts of ketchup and yellow mustard, salt and pepper.  Fry it up in a pan and either put it on a bun sloppy joe style, or eat it with a spoon and a slice of toast on the side for shoveling. 

Cheap, not-so-healthy carnivore comfort food.  The recipe sounds strange, especially the ketchup and mustard, but it's delicious.  There's something about it.

Last night's meatball pita with arugula & tahini was excellent.
Tonight - it was a clean out the fridge night. One diner had sauteed cabbage & cauliflower rice with spicy grilled chicken. A picky diner had fish sticks with cheese tortellini. The two least picky diners had spicy grilled chicken & cheese tortellini.
