Two nights ago: twice-baked potatoes, stuffed with broccoli and cheddar
Last night: Smitten kitchen recipe for one-pot farro with tomatoes, onions and stuff. Used an open bottle of wine for half the liquid, and tossed in some fresh spinach leaves at the end -- delicious!

Taco Tuesday with leftover red beans topped with coleslaw, avocado, cheese, and an apple. Using up the last of fresh veggies and eking out until I hit a store on Thursday.

Broiled salmon collars. This is the juiciest and best tasting part of the salmon, full of oil. Before filleting I cut below the pectoral fin up to the gill plate, and cut each side along the spine (just like filleting).
I also remove the pelvic fins along the belly and broil them, too.
Salt, pepper and let sit if coming direct from the fridge to warm up a bit, broil for 10 minutes. Unbelievably good.

Last night: vegetarian enchiladas, filled with a seasoned black bean and sweet potato mix.
Tonight: quick pasta with tomato sauce with artichokes in it. Asparagus.
Tomorrow: Dinner guest, so going out: Socca with chopped tomato salad to dip into, and possibly salsa verde (the spanish kind), grilled T-bones with a side of this italian potato, kale, and garlic (and plenty of olive oil) thing and a carrot salad, and for dessert, we are having a major Dad-joke that should still be delicious: Raspberry pi(e). With whipped cream.

couscous cakes (scallions, feta cheese, few other things, egg to hold it together) with a salad with olives, tomatoes and a red wine vinegar dressing.

Garlic noodles.  The NYT did a story on a local restaurant and tried to recreate their garlic noodles and so we're going to try it tonight.  It has 20 cloves! 

Bok choy on the side.  We usually make this with garlic (and soy sauce), but wondering if that will be overkill.

Tuscan herbed chicken thighs on a focaccia bun with sun dried tomato mayo and caramelized onions, and roasted broccoli salad on the side.  It was great.

Wraps (or kebabs).  Flat bread warmed and wrapped around diced refried roast lamb (with LOTS of garlic), lettuce. cheese, capsicum and home grown tomatoes, topped off with greek yoghurt. It will be dinner tomorrow night too.

Haha, yesterday late afternoon I was having wine (and a slice of a cake made mostly from almond flour) with a friend, and by the time I got home MrInCO had already finished up some leftover soup. I looked in the fridge and had a cut up apple and some brie (and a bit of miscellaneous leftovers, but more to empty out the containers). Not quite ice cream...

Tonight: mushroom tacos.

Last night we did premade gnocchi and a jar of pasta sauce. it got to be dinner time and there was no energy left in the tank for something interesting. Normally I stay away from premade pasta sauce, and I haven't had it in years, but I was pleasantly surprised. So maybe there's a new weeknight no-effort option other than salad and chicken nuggets...

Last night: didn't feel like having the cauliflower-in-tomato sauce over polenta thing that was planned, so cooked up a lb of stewing beef in a pressure cooker to make a quick beef stew, and had it with roasted Brussels sprouts and baked white and sweet potatoes.

tonight: well, there's still that cauliflower...

Frittata with some kale that needed using up, some already-cooked sweet potato from a few nights ago a little bit of prosciutto that needed using, and some cheddar. (I would've probably picked a different kind of cheese, but I was out talking to a neighbor, and the Mr. did the final assembly). Yum!

Finally cut up and roasted the danged cauliflower, along with 2/3 of an onion and a butternut squash. Cooked some farro. It will all be a grain salad with a parsley-lemon dressing (that's leftover and hanging out in the fridge), and some currants and the remaining 1/3 of the red onion diced really fine, which are relaxing in some red wine vinegar at the moment.

Yikes, sounds like a desperation meal when you can't get to the grocery store.  Or is this some delicacy I'm missing out on?

We're making penne alla vodka. We got curious about what work the vodka is actually doing in there, since you basically cook it all off, and google gives me some results about how it helps the tomatoes and cream meld or vague statements about how it enhances the other flavors, which don't sound super convincing.  But given the long history of the dish, we're trusting it makes a difference.  If I still had my Cooks Illustrated tome, I bet it would have some valuable insight.  Anyway, it's super easy and fast, which is nice for a weeknight.

Made this: https://smittenkitchen.com/2008/02/greens-orzo-meatball-soup/. except used some tortellini instead of the orzo. It was delicious, although the pasta soaked up ALL the liquid, so it was more of a damp-ish stew...

Fast beef stew (thank you to the already-cut-up stew meet in the freezer, and to the pressure cooker: I couldn't do it without you both!) with baked potatoes of many colors (including sweet potatoes) and savoy cabbage.

This isn't dinner but I had eggs that were getting old, so I decided to make pickled eggs!

I half ass followed a recipe on YouTube but added crushed pepper and more pickling spices than it called for. They need to sit for 10 days and that will be May 1st. I am so looking forward to trying them!

My Mom always made pickled eggs with pickled beets. I wanted to do that but had no beets. I will have to stock up on that for next time.

There were extra eggs I boiled and so far, made an egg salad sandwich and I might make a potato salad with the others. There will still be a few extra eggs and either I will eat them as is or maybe deviled eggs.

mmmm I love pickled eggs! I also like the ones made with beets, usually will buy a jar of pickled beets and then just drop some hard boiled eggs in the brine once there's room for them!
