Budget Bytes recipes tend to be incredibly flavourful. I've only done her vegetarian recipes, but they consistently hit above their weight class for their cost and avoidance of premium ingredients.

these green beans are the best I've ever had.  I cut down the butter significantly, but they are amazing!

Got home late, made one of the pasta versions we've been eating a lot lately:

Put on water to boil, heat up the biggest skillet in the house (16 inch? 18 inch? It's pretty big...) Cube the slowest-cooking veg and throw it in (in this case, eggplant). Then cut up brussels sprouts and bong them in the oven on 425 to cook after drizzling with a bit of olive oil. Add cut-up little tomatoes to the big pan. Put the pasta in the now-boiling water. Add garlic to the big pan, stir a bit. Start putting spoonfuls of pasta water into the big pan with the veggies. Add the last few olives, cut into pieces, and some red pepper flakes. Taste for salt, adjust.  When the pasta is cooked, add that to the big pan, with a bit more water. Add several spoonfuls of whole-milk ricotta, and stir until it's all combined.

DS decided he wants to go low carb.  DH made him homemade beef jerky for snacks.  It smelled so good I looked up how to make "tofu jerky" and it is in the dehydrator.  Might be good, might be trash, but seemed worth a go. It smells good, so.....

Dinner tonight will be "brinner".  Will get home later than usual with DS from our volunteer shift at food bank, so eggs and bacon for him, eggs and leftover roasted root vegetables for me.

I'm not sure if it will be for today's lunch or tomorrow's, but I have my very first attempt at a slow-cooker stew currently cooking. It's a mix between a French pot-au-feu and American-style beef stew (because I had stew meat, not the right meat for a pot-au-feu). No idea how it's going to turn out or how long it's going to have to cook. Wish me and my brand-new Instant Pot luck.

Didn't love it, and I"m a fan of her recipes in general. But, either my cut of meat wasn't right, or something else was off, as I thought it was overcooked, and i stopped it well in advance of the cooking time provided.

Pizza night.

Dough is rising. Apparently it needs to be turned a few times. Sauce is defrosting. I grated the mozzarella. The kids will pick some herbs from the potted plants and we will have a cheese and an herb.

The pizza dough directions DW gave me were,

“It is not like challah. It’s like a wet sourdough with a little yeast and a little sourdough culture and a little oil. But make it wetter than a bread dough. With mostly white flour but a little of our whole wheat.”

So I made it like the regular sandwich loaf I make just a little wetter and with some oil and yeast. We will see what it’s like. We have store bought mozzarella though so the kids are sure to like it however the crust turns out.

Chicken pad thai & salad. Caveat, the chicken pad thai was a cheater version from Costco, as we had guests until right before dinner time.

Likewise, we're having a smorgasbord of things tonight, to try & use up leftovers:
-DS16 & DS17 will finish off the pizza leftover from the soccer party this weekend
-DH is making salmon. He makes it basically weekly. I like salmon well enough, but not enough to eat it for 1/2 of my dinners. He often makes a large piece for himself, and tonight is that night.
-I'm having random leftovers, which includes the last of the chicken curry, a few small chunks of baked chicken, & some sliced cheese.

We will all have salad, so we don't get scurvy.

Tonight I am trying something new to me - stuffed marrow! My dad and stepmother gave us two large marrows when we visited them. Ofpym breaded and fried one of them last night along with a green tomato. Delicious. Then today it was my turn and I made a sauce with mince, onion, capers, olives, garlic, roasted red peppers and passata, as well as the scooped out flesh from the marrow and one of our overgrown scallopini. Topped with panko and parmesan, tinfoil, in the oven for 30 minutes. AND there is enough leftover sauce that we can add a can of kidney beans and some more passata and have that on pasta for dinner tomorrow night.

Red lentil dal with coconut milk and fresh spinach, which we'll have with flatbread -- usually I make rice, but I prefer flatbreads and got my act together to mix it earlier today.

We're making what we call shepherd's pie, which is not much like what a purist would call a shepherd's pie. It's an everything-in-the-fridge skillet casserole, including frozen green beans from last year's garden and fresh kale from today's garden, among a bunch of other veg, and a modest amount of ground meat.

For the sauce, I emptied the last maybe dozen ketchup and a couple of mustard packets that have accumulated despite our efforts to decline such things when we occasionally get takeout, plus as much as I thought I could include without ruining everything of a barbecue sauce that we won't be getting again. If I had half a thing of tomato sauce/paste left from another meal, I'd toss that in, too. We like a little celery seed and Worcestershire sauce, but a little goes a long way.

It'll be baked in our large cast iron skillet as soon as there's a layer of mashed potatoes to spread over top.

leftovers night!  DS will have salmon from last night, DH will have something from the freezer, and I will make a wrap using up the peanut ginger cabbage slaw from last night.  Will probably add some chickpeas or something for protein.

DS picked grilled cheese for dinner.  But I decided on a whim to amp them up into ABC's:  apple, bacon, cheddar.  With granny smith apple slices.  I first had them on a trip to Alaska.

I don't understand why grilled cheese places like Tom & Chee don't stock granny smith's.  I have thought about bringing my own, at times.

I ended up making black pepper tofu which is reliably delicious. I don't know why I always think it's going to be so much more bother than it is. I'm always surprised at how easy it is.

Wednesday is pasta-night here...... teens all going to sports around dinnertime, so I just make a big batch of pasta bolognese and everyone will serve themselves when they come into the house (and I will enjoy it with a glass of leftover red wine...... somebody has to do the job here.....).
Leftovers of the big batch will be taken care of by DS during the rest of the week.

Thank you for this. I've never heard of it before, and we'll be eating it next week, or as soon as I can plausibly put it on the menu without something else spoiling.

Tonight, I continue on my effort to use up the masa flour by making pupusas. Or, I put the now-aging masa flour on the compost pile and make Spaghetti All'assissina, we'll see which happens!
