Roasted Brussels sprouts with spicy maple aioli. Soo good, and I needed veggies. DH had crab cakes.

New Orleans bread pudding with whiskey sauce for dessert. I better eat some fruit now.

Do you have a recipe for this? Sounds tasty!

@Dollar Slice - that loss of wine is very sad. It’s why I make sure to drink ours regularly. LOL. We have had a nice bottle of VC hanging around all year waiting for NYE. Or anything worthy to celebrate. Alas, it’s been a rough year.

Yeah... I have the same situation with the Veuve, someone gives me a bottle of nice champagne every year, which I love, but I live alone so I don't tend to open a bottle of champers all by myself, and during the pandemic I ended up with a backed up supply since I didn't end up going to any parties for a couple of years where I could bring champagne. So I have two bottles of Veuve Clicquot hanging around. And this year a friend invited me out for NYE to a thing with free champagne so once again I've got nowhere to bring it. Unless I show up with a chilled bottle and some plastic glasses and we drink it on the street outside beforehand with whoever's around (there will be a line to get in, welcome to NYC on NYE).

The old wine we dumped last night is from my dad's uncle - he was very wealthy (mid 8 fig) and was a real bon vivant... had a big wine cellar and would buy cases of wine from 'good years' from high-end wineries that he thought would get better with age. But then his and his wife's health started declining and he had hundreds of bottles of very fine wine that he never drank because you don't drink when you're ill and 90 years old. They didn't have any kids, so when he died he left his money mostly to charity and my dad ended up raiding the wine cellar (even though he didn't know much about wine - my parents like wine but not enough to understand which year of which winery/region is the best). So now every time there's a big family dinner we try and open some and almost every time they are no good (it's been 10+ years since he died, so the odds of any of them being in their prime is slim). Although I will say the decades-old Dom Perignon made extremely high-quality vinegar...

Homemade pizza (dough and all) and salad. Pizza is actually very easy to make from scratch and doesn’t take long - about an hour.

I was off Friday with the house empty so I made a huge pot of turkey and sausage gumbo from scratch.  Definitely the best thing to do with leftover Thanksgiving turkey.    I made enough for dinner for 4 on Friday and Sunday night, a couple of lunches this week and 2 gallons to freeze. 

To be more authentic, I had Cajun music playing for the almost one hour of stirring the roux.

Homemade chicken soup with extra-rich homemade Instant Pot chicken stock. I got it that perfect gold color and so gelatinous it turns to a thick jelly in the fridge. Trying to ward off the tripledemic for the holidays ;-)

Finally finished all the Christmas Dinner leftovers last night....For the record, corn casserole/pudding goes GREAT with chili.

Tonight will be gnocchi with homemade acorn squash brown butter sauce and peas.  YUM.

Tonight:Sausage and tomato sauce (basically, spaghetti sauce) over polenta with asparagus.

Tomorrow: The Fondue-tastic New Year's Eve dinner: appetizers (it'll be smoked salmon on artichoke hearts with some sort of vinaigrette), cheese fondue with several baguettes of cut-up bread, and also several salads, then chocolate fondue with mostly fruit and some whole-orange sponge cake to also dip in.

Sunday: Lentil Soup, of course. And probably Intermittent Fasting...

Easy cupboard chili - cans of tomato, black and red kidney beans with most of a jar of salsa that was too sweet to eat on its own, frozen corn, on top of rice. Greek yogurt instead of sour cream and thinly sliced green onions.

Stuffed peppers to use up a bunch of bell peppers before they go bad. I bought them for a specific recipe that I didn't make over the holidays and now I cannot remember what the specific recipe was.

I have a whiteboard on the fridge that I use for exactly this purpose: when I get home from the store, I write 7 dinners down on the bottom of the whiteboard, and that's most likely what we're having. If I have an ingredient that needs to be used up, I'll add notes to the menu, like
- mexican casserole (use cilantro), slaw, avocados.

The top of the whiteboard gets used to note anything that should be added to the list, and I've (mostly) trained my family to write things on there as they use them up (or open the last one, or open the next-to-last, in the case of things that we use a lot of).

We're having classy beany-weenies, with a hunk of lamb mergueza sausage I picked up at the farmers market a few months ago and tossed in the freezer for when the moment was right. Also two kinds of white beans (I think cannellini and large lima) that I cooked extra of and put in the freezer, and a ton of veggies (onions, garlic, leeks, carrots, celery, perhaps cabbage?) and maybe some harissa.

A friend bought too many tomatoes and gave us some. We chopped up the tomato and threw in some onion and dressed it with spices, EVOO, and vinegar. Instant dinner salad.

I totally phoned it in tonight.  Was going to make falafel but didn't feel like cooking.  Wanted to order out, but pacified myself with frozen fish fillets from the freezer and made pasta with jar sauce.  Yay frugality muscles!

I made a double batch of chicken curry, and my husband made Persian rice. Together, they are one of my favorite meals. Yum.

Wow, I haven't checked in for...five pages. Yikes! Tonight will be stuffed bell peppers. No recipe, just going to wing it. I have veggie meat, leftover basmati rice, some canned, seasoned tomatoes and six beautiful rainbow colored peppers.

Have never had that rice before so was a bit hesitant to use in stuffed peppers so we are having the Mexican rice tonight with steak and if we like it enough, it will go in stuffed peppers. However, I wanted to use taco spice and thought it plus the Mexican rice might be too salty. So may go back to using white rice and a packet of taco powder spice. Decisions...decisions!

I never thought about taco seasoning! I leaned Italian-ish instead. I had some fire-roasted diced tomatoes. Mixed that with rice, veggie meat and a big heap of Costco's no salt seasoning. Par baked, then topped with marinara for the last 10 minutes. Came out pretty well. So filling that we ate less than anticipated, so hooray, an extra meal for the week!

The Mexican rice was okay. We like spicy stuff so we added crushed red pepper to it to kick it up!

I definitely will be making the stuffed peppers with white rice when using the taco seasoning. I never heard of using taco seasoning either but ran across a recipe using it. I love tacos so should be very tasty!

Last night was beans on toast, haha.

Actually, this white bean soup: https://cooking.nytimes.com/recipes/1020754-spicy-white-bean-stew-with-broccoli-rabe (except we had broccoli not broccoli rabe) for which I also cooked 4 cups of small white beans and 4 cups of giant white beans in the pressure cooker and stuffed 4/5 of them both into the freezer for dinner at a later date. We had it with croutons/little toasts made of a couple of bagels that I found in the back of the freezer, cut into tiny rounds and toasted in the oven (while making granola, multi-tasking for the efficiency win).

Tonight: the opposite, pretty much. Grilled pork chops, roasted sweet potatoes, and roasted Brussels sprouts. Probably with a salad. We're getting close to needing to go grocery shopping again...
