I made a mediterain salad with salmon on top. I will eat the left overs through out the week

Made pizza bowls for lunches this week.  Basically a bowl of pizza toppings without the crust.  Higher protein for the calories and actually reheats better than pizza (though cold pizza is one of my favorite things).

Got a lovely  bunch of beets at Saturday's farmer's market, so beet risotto this evening. Probably with veggie stock, because I'm too lazy to defrost the giant tub of poultry stock in the chest freezer.

Chicken chimichangas. Ground chicken browned with spices (I used salt, pepper, cumin, chili powder and garlic powder), tossed with shredded cheese and tomatoes, and rolled up in tortillas which I pan-fried in the cast-iron skillet until crispy. Served with guacamole and pineapple salsa. So damn good.

Aldi has these English Fish and Chips one person dinners priced at $1.49 and the felt heavy. WHAT A BARGAIN. We used 3 to feed 4 people and have an extra chips bag and a single person meal leftover. I wish I had bought more. They were big and crispy portions. It has to be a mispriced item. I did homemade Cole slaw, tartar sauce and steamed broccoli for a side.

Last night was breakfast burritos (on sale breakfast sausage, leftover tortillas, eggs, cheese, salsa) & fruit.
Tonight is either Bread/Fruit/Cheese/Salami (a scrounge-ish, use-up-the-overripe-fruit standard in our house) OR we'll grill kabobs (using pork & a ton of on sale veg) plus hummus and leftover pita from earlier in the week.

Whatever we don't do tonight we'll do tomorrow, and we won't have used up our "out" night for the week (always a win when we can swing that).

Have a couple of people convalescing in my home so made a vermicelli noodle salad with veggies, marinated tofu and a hardboiled egg. Very tasty and simple to process.

This one is in our regular rotation, we probably do the chickpea version more often than the chicken one and it's super tasty! It's nice because we can use the IP to cook the chickpeas from dry and then use it again for the final dish too!

We had butter chicken and tikka masala with two kinds of rice. The butter was good and the tikka was spicy!

I gave pizza a try in my cast iron. Honestly, turned out good. I will probably buy a pizza stone and continue making pizzas

Some friends were coming through town and invited us to go out to dinner. Instead, we invited them to our place and barbecued at home. The steaks were better, the wine was better, and the cost was less!
