I'm making a one skillet dish, with rice, chicken, enchilada sauce, etc. I'll sub out a bunch of stuff, because I'm in a fridge clear out mode. We serve ours with tomatoes, cheese & sour cream on top. The teens usually wrap it up in a burrito.

We call that Snack Dinner and it's on regular rotation in our household :D

I'm debating between making a tofu stirfry using the braising liquid from the Asian-style pulled pork a few nights ago and roasting some kumara and having it with the beans/tomato/corn salad from last night.

BIL Birthday:

Roasting a chicken (I was going to roast whole breasts, but the price difference between just organic breasts and a whole chicken was absurd, so for less $ I just bought the whole thing and will spatchcock it so it takes not much more time) -- I'll make gravy with the drippings.  BIL will bring rice (this was not my plan, but he's going to do it, so WTF), Salad, steamed asparagus. I made his cake last night. (It's a whole-orange cake made with olive oil in the food processor, with good chocolate chips mixed in. It's super-fast to put together, and is genuinely delicious, especially if you lean towards liking marmalade-y things.)

My daughter cooked again last night.   Amongst different parts of the meal were artichokes.  I don't think she cooked them long enough as they were tough and most of the leaves inedible.  I've never cooked them, but enjoyed the flavour.  Does anyone have a sure fire way of getting them soft?

And I use some tasty olive oil. I use a food processor, (add orange(s), then oil, then sugar, then eggs and run it after each addition. Then let it run a bit more after the egg is added to get some air mixed in there. My recipe uses slightly less baking powder, but I doubt it matters much.

Then add your favorite dark chocolate chips, 1/2 - 3/4 cup. I find it bakes better in a ring pan -- otherwise it tends to dip in the center.

Omelets, with a Thai chili salad and toast. Omelet fillings were pepper, onions, tomato’s and mushrooms. “Someone” ate all the bacon bits and returned an empty bacon bit bag to the fridge. Time to cook more bacon bits for nights like tonight. For a 15 minute rush dinner, I impressed myself channeling my inner Julia Child.

Mark Bittman's "Cassoulet with many vegetables" which I think of as "This ain't really Cassoulet" because it doesn't contain duck fat, preserved duck, or a whole lot of sausage. It is, however, delicious! (And mostly contains many vegetables, and white beans.) homemade croutons with the last of a stale baguette, and the end of the homemade sauerkraut.

Tonight is leftovers/clean out the fridge night.  Butternut Squash pasta bake for me, Chicken parm for the lad and London Broil for DH.  But your smashed potatoes with yogurt garlic sauce sounds great.

Tartars de manzana (Apple cream tart) and perrunillos (almond shortbread cookies) along with some manchego cheese and crackers. DD asked me if I could make desserts for her Spanish open house. Little did I know I would be making recipes in Spanish with European measurements and no real directions. But it was actually a blast and they turned out looking like legit pastries.

Tomorrow I am supposed to make fresh churros and bring all this at 11:15am, but Costco opens at 10am and might be my friend….I have everything to do it at home, and have actually made these fairly often. I just hate being under a time crunch in the morning and she wants 40 of them. (10 Costco sized would do).

I ended up doing both! Costco only had 5 churros available. They looked lonely on the platter. I have a deep fryer and they were surprisingly easy to do. Tomorrow we will have funnel cakes to celebrate the vacation.

Apples and cheese sound like great travel food.

Tonight was easy rolls and cherry balsamic vinegar/oil and just light fruit/nuts. I need some veggies in my life tomorrow to balance those funnel cakes.

So I threw 6 cups of dry pinto beans in the instant pot, cooked 4 cups of rice on the stove. I seasoned the beans when they're done and put them in a big tupperware in the fridge. I make a "bachelor burrito bowl" adding jarred salsa, sour cream, and hot sauce.

Should last a few days.

I wouldn't eat cooked rice that's more than a day old. Do other people? I'd be fine with the beans :)

Is there a reason not to?

We frequently make a big bowl of rice in the rice cooker, then add it to meals throughout the week. No problems here either.

Yes this is what I'd been taught, that it's one of the worst culprits. Something to do with it being plain carbs. But if people are eating days old rice on the regular must be ok. There's probably things to do to lessen the risk like using a clean dry container, fridging almost straight away and not scooping it in with a spoon you've licked. Two of those things don't happen in our house.

Supposedly the problem with rice is that there's a type of bacteria sometimes found in dry rice that has a dormant spore that can survive being boiled. So you cook the rice and it's still alive, then it cools down, and at serving/eating/body temperatures it can start reproducing again. So if you cook it and then keep it at the food safety "danger zone", and your rice happened to have that bacterial spore in it, you get food poisoning. If you let the leftovers hang out on the stove during dinner, then put it in the fridge, then reheat it the next night and let it sit out for serving, etc. you could run into problems.

That said, it's not nearly as common as being poisoned with stuff like E. coli or salmonella, so I don't think it's something to be super freaked out about. But it's good to know that you should eat or chill your rice right away and not just let it sit out.

Yeah, same.  I don't think I ever reheat more than once (i.e. we're careful to reheat only the amount we need for a given meal if we've made a large enough batch for many servings), but I've been reheating rice all my life and never had an issue.  It was only recently that I found out there's any reason to consider not doing it.

We regularly eat rice as leftovers. My benchmark before tossing is 4-5 days.

I was going to make orange chicken with rice tonight, but the day has gotten away from me. Instead, we'll be having (all from Trader Joes): orange chicken veggie fried rice, edamame.

The someone-else-who-is-definitely-not-mustachian-is-paying-for-it family holiday party: Some kind of fancy-stinky cheese course with fruit, crackers, and Veuve Clicquot, a 7 lb. standing rib roast with horseradish sauce, latkes with sour cream and homemade applesauce, and roasted asparagus. They opened two bottles of (inherited) ~35-year-old red wine but it turned out they were past their prime and they got dumped down the sink. :-S That feels like a metaphor for something, like enjoy life while you can and don't wait until it's too late...

@Dollar Slice - that loss of wine is very sad. It’s why I make sure to drink ours regularly. LOL. We have had a nice bottle of VC hanging around all year waiting for NYE. Or anything worthy to celebrate. Alas, it’s been a rough year.

Tonight it’s cioppino and roasted red pepper soup along with panini and potato salad. The menu for the week has been planned and shopped. I hope to not go to the store for anything other than baguettes and produce until the New Year.
