You bet! It calls for:

1/2 cup maple syrup
1/2 cup bourbon
4 lbs pears (peeled, cored, chopped)

Bring everything to a boil, then reduce heat and simmer uncovered until pear is very soft. (30 minutes or so)

Process it using food processor. (I prefer to use an immersion blender since it's easy...)

Bring back to a boil, reduce heat and simmer until it thickens and darkens in color, stirring often.

Here's where I let it cool and portion it out to add to the freeze, but you could also can it if you prefer!

I got a bunch of eggplants in my CSA box yesterday, so decided to try my hand at making my favorite Indian dish, baingan bharta. I don't have much experience making either eggplant or Indian food, so my expectations were low, but it turned out really good! I followed this recipe, with some minor modifications:

We have all of the tomatoes, because our garden is doing super well. I've been rotating through salads most nights: caprese salad (tomatoes, fresh mozzarella & basil, olive oil, salt & pepper) & Greek salad (cucumber, tomatoes, feta, fresh herbs, olive oil, s&P). Both have been delicious.

We've also been grilling zucchini, which is super yum.

@nessness Cooking with manali is my go-to site for Indian recipes. That’s where I got my rajma recipe from and also a carrot and moong dal salad that’s in regular rotation. I’ll have to try the eggplant recipe.

Ah yes, also one of my favorite Indian dishes (together with Gobi Manchurian, garlic naan and Aloo paratha) as well. It's so good! Is it indeed better when you grill it directly in the flames? It's how it's supposed to be made right? I usually grill the eggplants in the oven as it's just convenient.

I just bought the Vegan Richa instant pot cookbook, should try the recipe for this dish in that book as well (it uses smoked paprika or liquid smoke for the smokey flavor).

I made fresh beet salad yesterday with roasted pinenuts, vegan feta and balsamic vinegar with oven potatoes and that was also very tasty!

Dinner last night was romaine lettuce, cherry tomatoes, red onion, mushrooms, and datil peppers with olive oil and black pepper dressing. Simple, but fresh ingredients made it shine.

The total meal wasn't vegan because I ate it with a burrata, but the salad would have been great on it's own.

Last night dinner was roasted onions, peppers and figs with turmeric rice wrapped in pita bread. Would have been better with tzatziki sauce but I was lazy.

Last night I made a thick vegetarian tomato chili with peppers, onion, potatoes, and three beans.  Corn bread on the side.  It was a nice comfort meal on a cool stormy night.

I got the Pollan family cookbook called "Mostly Plants: 101 Flexitarian Recipes" from the library. There's not a lot that tempts me and it's all US measurements which doesn't work for me* but I did make the lentil & bean chilli tonight, although with alterations.

I dialled the chilli way back because it seemed like way too much and added eggplant, sweet potato & zucchini that needed using up. Anyway it turned out really delicious and the 4-6 serves is probably 8 serves with extra veg so I've got a meal in the freezer too.

Here's the rough idea:
1 can x kidney beans
1 can x black beans
1 cup lentils
1 large can diced tomato (I just used a normal sized one and it was fine)
2 tbs tomato paste
2 cups stock
1 tbs soy sauce
Red bell pepper
Onion
Carrot
4 cloves garlic
1 jalapeno pepper
Cumin, paprika, chilli powder, S&P

Sweat the onion, then the rest of the veg for a few mins. Add the other things except beans and lentils and bring to boil then add lentils & simmer for 15 min. Then add beans & simmer for 10 min. Serve with rice and top with cheese or sour cream etc.

*In the tips section it recommends draining an egg before poaching to remove excess water which confused me a minute. Is this a US thing because they are washed and water gets in? And also confused because I poach eggs in water.

American here, this makes no sense to me, either. Water doesn't get into our eggs! My guess would be an editing error, and they mean after poaching.

@LD_TAndK  I grilled it w the veggies inside. I mashed the avocado, then layered it with slices of tomato and spinach then put the cheese on one side of bread. Did it on slightly lower heat to melt the cheese and allow the spinach to wilt. It was delicious very filling

Tonight's dinner is vegan creamy mushroom and wild rice soup.

I know you like to make broccoli sprouts (me, too). I would like to try growing pea shoots. Have you tried growing them? Are they tricky to grow?

@NinetyFour here's the one we regularly make - it's pretty flexible

Small dice 8-12 mushrooms (about a cup) and dry cook in a chili pot until the water is out and they smell good
Dice one onion
Add a glug of oil to the pot, add onions, salt and pepper and stir
Medium-large dice 2 peppers, add to pot along with any chili peppers you want to use (1-2 fresh, 5-8 slices of pickled, fine dice)
Saute for 5-ish minutes
Drain and rinse 3 cans of beans - a mix of black/red kidney/pinto is nice. Cannellini are good.
Stir in then add spices - heaping teaspoon ground cumin, same amount smoked or sweet paprika, half a teaspoon smoked chipotle or chili powder.
Let cook for a bit then add a 700ml bottle of passata and the remainder of any red sauces or salsas you have in the fridge that need using up. (sauces are optional)
Add a cup of water, a cup of bulgar wheat (coarse grind not fine) and 1 teaspoon of sugar.
Cook until the bulgar is cooked and it smells good then add some frozen corn/quartered and sliced zucchini, cook for another 5 minutes or so and you're done.

Good with quesadilla, eggs, over rice with feta etc

Okay, I'll add one to the pile. I'm not vegan, so if you are, avert your eyes...

I like soy chorizo. I typically warm it through, then add eggs and scramble until cooked.

Lately, I've been starting by dicing a whole onion and browning it. Then I rough chop a bunch of brown mushrooms (good way to use up wilty ones) and add them to the pan. After a few minutes I add the chorizo. Once it's all cooked through, I turn down the heat and add eggs. I let it cook covered for a few minutes, then uncover and stir until everything's well blended. Dump into warm tortillas, add a little Cholula and you're set.

Also Sam's Club sells Santa Fe Tortilla Co's Probiotic Whole Grain & Flax Tortilla Wraps, which are healthier and cheaper (why?) than flour tortillas. They go perfectly with this concoction.

What I love about this recipe is that the finished product is not unlike the Boca-type crumbles, but way less expensive. It keeps well in the fridge and I use it for tacos, burritos, etc. You can even freeze it with good results.

It's a little unconventional, but I love the Moosewood Cookbook chili recipe. https://www.bigoven.com/recipe/moosewood-vegetarian-chili/113333 I use canned beans, skip the wine and make a 1/2 recipe.

Lunch: Instant noodles, half a zucchini and half a yellow pepper tossed in some olive oil, with some Korean hot sauce, sesame seeds, and a fried egg on top. Healthy, super-filling WFH lunch in 20 minutes, tops.

 

Wow, a phone plan for fifteen bucks!
