Vegan Crispy Eggplant Parmasean (https://minimalistbaker.com/crispy-gluten-free-eggplant-parmesan/)- so delicious, and Iím not much of an eggplant fan. We followed the serving suggestions in the recipe for an indulgent Sunday night meal.

Rice cooked with broccoli with chickpeas and two fried eggs. Oh, and a bit of chips with it. All seasoned with an spicy herb mix.

One of my standard lunch burritos: brown rice (cooked in veggie broth for flavor), black beans, lentils, corn, diced tomatoes, and cheddar cheese in a tortilla. Could easily leave out the cheese to make it vegan. I make these ~15 at a time and freeze them.

Green lentils, seasoned with Bragg's and black pepper--with some hemp seed tossed in.  YUM.

It's a lateral freeze down during the melt up.  Soon to be followed by the transverse falling bounce and the transient index inversion short, both of which are also strong sell signals in this buyer's market.

A real dutch winter dish, mashed potatoes mixed with kale, veganized with vegan 'bacon' pieces and stir fried onions, garlic, red pepper and sweet soy sauce. Served with spicy mustard and pickles!

A mini bar of Green & Black's 70% cocoa chocolate. But only because I've eaten all the milk chocolate bars and am down to the dregs of the box. I'm very much not a Satisfied With One Small Square Of Really Good Dark Chocolate sort of person, I like quantity over quality.

cooked apples made with maple syrup, cinnamon and cornstarch. I had three apples that had gone soft.  I was going to throw them out, and decided to do this instead.  very good.

Today I had vegan lasagna for lunch (with tofu ricotta, mushrooms, onions, baby kale, and soy granules). Tofu and veggie Banh mi sandwich for dinner so yummy!

Butternut squash hash made with coconut oil, sage, black pepper,  and bunching onions.  Sauteed onions are better but they don't agree with me so I use bunching onions. 

Saute the squash then add the onions and sage.   Once every thing cooked crack a couple of eggs over it and let them cook.   For the non vegetarian option add cooked bacon at the end.  We make it both ways depending on what we have on hand.

Dhal Sri-lankan style, rice, pita bread from breadmaker dough then panfried, salad of spinach leaves topped with leftover salad of roast beetroot, walnuts, fetta, and chai tea.

Dinner last night: tacos with black beans, bell pepper, lime juice, spicy guacamole, and cilantro. Would have been vegan except I toasted the tortillas in a little bit of butter.

Breakfast: oatmeal with blackberries, slivered almonds, and cinnamon.
