Had a self-made bbq style pizza with fresh pineapple, red bell pepper, onions yesterday. I'm having a big smoothie right now (spinach, apples, flax seed oil, banana, hemp seeds, blueberries, oats). Sandwiches (4) with avocado and tomatoes for lunch.

Wow, our smoothies are really similar, I also had some strawberries in there, forgot to mention.

Mushrooms in smoothies, wouldn't have thought of that either. Any good? Do you taste them?

I don't taste the mushrooms at all with the other ingredients, which is the main reason I include them! Not a huge mushroom fan otherwise :)

Not actually vegan, but I make a seed and nut loaf which is (surprise!) mostly seeds, nuts, rolled oats, olive oil, a little honey... It's pretty fantastic and fairly well balanced in terms of protein, fat and carbs compared to 'normal' bread. I usually have it with homemade almond butter (also vegan) for even more good fats and protein.

Sounds really tasty, HappeirAtHome. Would you care to share your recipe?

It's taken me ages to see this and respond, sorry! But here it is :-) based on http://www.mynewroots.org/site/2013/02/the-life-changing-loaf-of-bread/ but I prefer my version.

Seed and Nut Loaf
•   1 cup / 135g sunflower seeds and/or pepitas
•   ˝ cup / 90g flaxseed meal
•   ˝ cup / 65g hazelnuts or almonds, chopped
•   1 ˝ cups / 145g rolled oats (replace with quinoa flakes if you want the loaf to be gluten free)
•   2 TBSP / 30g chia seeds – black, white or mixed
•   3 TBSP / 17g psyllium husk meal (also called psyllium husk powder)
•   1 tsp salt (I’ll often make it two tsp salt for taste)
•   1 ˝ cups / 350ml water
•   3 TBSP olive oil
•   1 TBSP honey or maple syrup (I’ll often use an extra ˝ TBSP honey for taste – still considerably less sugar than shop-bought bread)

Combine dry ingredients and stir well.
Whisk wet ingredients together, stir into dry until well mixed.
Line a loaf tin with baking paper (leave plenty of overhang) and press mix into the loaf pan.
Leave to sit on the kitchen counter for two hours, up to 12 hours is fine.
Heat oven to 180C and bake loaf for 30 minutes.
Use baking paper to lift loaf out of pan; turn onto fresh baking paper and place back in the loaf pan ‘upside down’.
Bake for a further 30 minutes.
Allow to cool completely before slicing. Freezes well. Best toasted.
I usually make two loaves at once as they’re not large and we pull a few slices out from the freezer most days.

Lunch today: vegan chilli (homemade refried beans, black beans, capsicum, spices, garlic and tomato paste) with jalapenos and a little mozzarella on top). Steamed broccoli on the side.

Sandwiches with humus (hummus/hoemoes, I've seen all and don't know what the correct one is anymore) rocket salad and sundried tomatoes with a fresh fruit salad on the side. I love my humus. ;)

Then tip in the petit pois and continue to fry for a reeeeally long time. This is a great one to have on the go if you're busy doing other things around the house. I could eat a whole bowl of these as a meal.

Also the website www.thefirstmess.com is absolutely amazing. Sometimes not very frugal, but mostly, because it's all fruit and veg, pretty frugal. The roasted cauliflower soup (with lemon) is flipping great.

Dinner was a few hours ago but anyway. Marinaded slices of firm tofu roasted in the oven, with roasted zucchini and capsicum. Entree was roasted potato skins (leftover from a few days ago when we cooked mashed potatoes and peeled the potatoes.

Dessert was a slice of fruitcake made by friends. Possibly vegan.

Potato, cauliflower and carrot baked in the oven in a cheesy white sauce. The white sauce was made from olive oil, with finely diced white onion and garlic sauteed, then white flour, skim milk flavoured with black pepper, grated cheese (vegetarian because it's from Aldi) and a bit of vege stock powder. Yum!

Dessert was a piece of vanilla halva. I'm seriously addicted to halva at the moment.

Bought 12 ears of corn for $4 at the FarMar on Saturday. Froze a few small bags of kernels but trying to work it into more meals.

Lunch salad was chopped romaine, cucumber, tomato, avocado, roasted sweet potato, and corn. Creamy hot sauce for dressing.

Currently eating leftovers of what has become my new favorite meal:  Coconut Chickpea Curry.

It is crazy easy and so amazingly delicious:

1 onion, diced
2-3 cloves of garlic, diced
1 can coconut milk (the full-fat is divine, but we usually use the low-fat version)
1 can drained chickpeas
a lot of yellow curry powder
Cilantro, dried works if you don't have fresh
2-3 bay leaves
Salt and Pepper
*other veggies: cauliflower, carrots, etc.

1.  Sautee the onion.  Add garlic and any other veggies you are using (right now I'm eating it with carrots- delicious, but it was great with cauliflower last week.  Also totally filling and delicious if you don't add any additional veggies).
2.  Pour in coconut milk + 1/4 can of water.  Add drained chickpeas, curry powder,  bay leaves, and salt+pepper. Let simmer for 10-15 minutes (usually I cook a pot of rice during this time, and just let it cook until the rice is done).
3.  With about a minute left to go, I add the cilantro
4.  Serve over Rice

(We have sadly given up naan in our house due to my boyfriend's stomach's insistence that it has Celiac's, but that would be sooooo good for mopping up the plate!)

You can water this down a bit if you like it runny.

It freezes beautifully, reheats easily, and is so seriously delicious.  Love it!

Naanbread is delicious but in most there is yoghurt so I don't eat these. We have to go to a special health kinda store to go get the ones without and  generally just serve ciabatta or pita or something with curries. I read you can make your own though.

Breakfast = home brewed coffee and 2 slices toast w almond butter on one and homemade jam on the other

Lunch = veg sandwich

Dave's killer bread (I know it's expensive)
fat free mayo
avocado slices
raw onion
tomato slices
lettuce

dessert = a fresh peach

snack for later= a cold cooked ear of fresh corn

Dinner = salad w lots of veggies and garbanzo beans and fresh hot ear of corn (hey, it's summer, the fresh corn is terrific)

Dessert = watermelon
