I'm planning to try this kale and chickpea stir fry tonight (https://runningonrealfood.com/kale-chickpea-stir-fry-miso-peanut-sauce/), served over roasted sweet potatoes.

Kale was actually on sale at the grocery store this week, and I had planned on making a batch of chickpeas, so this is what I came up with.  Seems like a good candidate to top with a fried or poached egg.  Not sure about sides - either a bag of broccoli from the freezer, or green beans.

I'm happy to be back in the kitchen cooking again, but I have to get re-used to the lack of space.

Mmm, that sounds like delicious fall food!

We're having a stir-fry of baked tofu and various veggies (I have a lot of carrots and mushrooms that need to be used up) with brown rice-quinoa ramen noodles.

Deep into hearty soup mode - this week / tonight we are doing lentil sausage soup with chard.  Would be nice with fresh bread on the side, but we'll be eating with roasted cauliflower.

I think I'm chauffeuring teens around (soccer carpool, school football game, etc). I'm planning on crockpot chicken & dumplings & fresh tomato bolognese sauce this weekend.

I made a beef barley stew, although couldn't find any barley, so substituted quinoa. My teen made a loaf of French bread.

Butternut squash and sausage stuffed shells (https://rachelschultz.com/2013/10/08/butternut-squash-ricotta-stuffed-shells/).  I remember it being a hit the first time I made it.  Serving with roasted broccoli and spinach side salad.

caldo tlalpeņo with jack cheese and cilantro sprinkled on top, and the good (warmed) corn tortillas. Managed to make enough for the teen to have leftovers before his soccer game on Tuesday, which will be freaking COLD.

Chicken & dumplings. It wasn't quite creamy enough. I'll need to sort out a bit more spice & something to dial up the flavor next time. I'm now remembering that I added a few diced potatoes last time I made it, which I think would have helped.

Broccoli cheese soup with crusty sourdough tonight. Needed something simple for Halloween. I made it in my mom's Staub enameled cast iron pumpkin cocotte*, because if someone's going to actually buy that, you may as well make Halloween soup in it ;-)

* translation: it's a fancy cooking pot that looks like a pumpkin and costs hundreds of dollars

French onion lentil shepherds pie.

I just made regular mashed potatoes without the cauliflower and didn't make them vegan, but I really liked the addition of nutritional yeast to the potatoes, I think I'll always do that from now on.

Well I finally found a use for those little packages of sauce that come with potstickers.  I cooked up some salmon steaks, then dumped those in when it was almost done and let the liquid cook out and voila, blackened, sticky coated salmon.  It was surprisingly good, although a bit salty.  Had it with brown rice and green beans.  Leftovers tonight.

Collard greens! All the green leafy stuff was way high at the store, except for collard greens, so they looked very appetizing. I scooped up a big bunch of em for $1.29.

Cooked them with red pepper, beef bullion, and olive oil.  Wow. Who knew they would taste so good!

I have come here for inspiration, since I am drawing a blank on what to do tonight.  Or I may try my old standby, which is to google "Recipe,  . . . " and then list whatever ingredients I have on hand.  I've found a few good things doing that.

DH has started a new job that has him travelling almost every week to NVV (Not Very Vegan) places like Springfield, Illinois. (Very friendly people, but very limited options for vegan meals at restaurants and he has no cooking facilities where he's staying.)

So I'm trying to make special meals for him on weekends (and different from his no-cheese veggie pizza / veggie Thai with sad tasteless tofu dishes he's been getting so far.)

Tonight's dinner is mushroom farro risotto, with baby spinach, red peppers and a little Beyond Sausage, plus a side salad featuring fresh carrots from our outdoor garden, lettuce from my Aerogarden, radicchio, fennel and pinenuts.

Beyond Sausage is fairly expensive, but we buy 4 x 4 sausage packs from Costco, and one sausage for two people in the dish I'm making goes a long way.

Chicken curry with rice. It was my most successful curry yet. So tasty. I wish I knew what was different, as I followed the same recipe as usual.

I hosted friendsgiving last night. We spatchcocked a turkey and did the left half with gochujang and the right half with lemon and rosemary. For sides - chestnut soup, pear walnut salad, mashed potatoes, sweet potatoes, green bean casserole, red cabbage, and cranberry jalapeno poppers. For dessert we did dark chocolate pecan pie, pumpkin pie, and stollen. Everything turned out fantastic and it was a great practice run for real thanksgiving.

Marcella Hazan's tomato sauce (https://www.thekitchn.com/marcella-hazans-amazing-4ingre-144538#post-recipe-11888) - I am not familiar with how famous she or this recipe apparently are, but ever since my now-DH introduced it to me when we were just a couple months into dating, it's in the regular rotation.  The insane amounts of butter are really perfect for fall when fatty comfort foods are so good (just me??).  With salad and $4.99 red wine from Trader Joe's.

Puttanesca Pizza from Robin Robertson's 'Fresh from the Vegan Slow Cooker'.  I'm using one half of a cube of pureed basil from my freezer.  Crust is amazingly crispy considering the pizza is cooked in a slow cooker.  The pizza dough has 1T olive oil, which probably helps with crispiness.

Here, here! Tonight is 'clean out the fridge and the produce on the counter' night for us, and tomorrow is a special dinner out for our eldest which is doubling as a 'no dishes/leftovers' the day before we leave for more than a week to visit family. So: leftover soup with leftover baguette, someone's getting some basic fried rice with leftover rice, and polishing off the perishables drawer (fruit, cheese, salami, etc.) for anyone who doesn't want the first two options.
