Lunch!

Just finished dying the hard boiled eggs for Easter with my 6yo...and realized lunch is now taken care of through Wednesday.  I love egg salad sandwiches and often forget that they are an option!

I normally add some curry powder to the mix, makes them extra tasty. Happy Easter!

If I do that, my BIL will eat every last one...and my lunch plans will be ruined! ;)

I just don't know why I never think to make up a bunch of hard boiled eggs for egg salad sandwiches at times other than Easter!

SIL always brings them to our large family Easter gathering. They are usually gone in 10 minutes so you have to be quick (and hopefully not late to arrive)

Funny, I love them too and have completely forgotten about making them. Haven't had one in a few years.
