I am also getting something like $580 Costco rewards!  YIPPIE!

If you are hell bent on spending he money I would suggest the following. I have bought the canned Kirkwood beef in a can and it is awesome! You can heat it up and add veggies and add to rice or noodles or over mashed taters. Beef, broccoli and rice is so good. Then you could buy canned tuna. The cans are bigger than in the grocery store and tuna is great. Then you could also buy canned Salmon. You can make salmon loafs, patties and casseroles. The salmon is very good food for you. I also like the boneless pork chops at Costco. Then there are the Roasted Chickens they offer for $4.99. They are good sized. I would buy maybe 5 or 6 of them and either freeze them as is or take the meat off and freeze the meat for casseroles with rice, noodles, taters and veggies. I would also check out the butter. Butter has skyrocketed this past year and Costco has much cheaper prices. You could also buy a big bag of basmati rice. They are like 20 lbs. Make sure to stretch your $$ on stuff that will last for a long time. Not junk food that will expire in no time.

I usually just cash the check and put it in my piggy bank. So far I have about $1500 in the pig.
