chili + potatoes = awesome

I had some left over chili, and some left over potatoes that I didn't want to go to waste, so I mixed the potatoes into my chili for lunch.  Holy shit is this awesome.

Chili on baked potatoes is pretty popular.  Never really thought about just mixing (diced?) potatoes into chili though.

They were diced baby reds cooked with some seasoning and parmesan cheese.

I recently discovered this too. Its not too common where I am from. I made "baked" potatoes in the crockpot with water and they were so moist and topping them with chili sent them over the top!

Try throwing some (thick) chili into a soft tortilla with some cheese and pan frying it up.  a chili-cheese-burrito.  Oh yeah.

Carne con papas, mmm, grew up on simple meals like that. Ground beef + spices and veggies or potatoes, I could eat that every day.

Had some leftover chili the past week or so. Went in tacos and on baked potato. Garnished with homemade salsa and sour cream (a few corn chips on the taco too). It was so good it made me want to slap everybody I know that won't eat leftovers.

Baked potatoes with "stuff" on them is one of my go to lunches at work.  Broccoli & cheese, and chili & cheese are two of my favorites.  Cheap, easy, and yummy.

Saw a recipe on Biggest Loser and I changed it up a little bit and do either turkey or chicken chili and a sweet potato and i put some green salsa on one side and red salsa on the other side with some diced red onion and cilantro and it pretty good and fairly healthy!

Baked potatoes + last night's leftovers are always a good, frugal choice.  It's a great way to divide one piece of chicken and one cup of vegetables (with the addition of some cheese) between four people . . . and it doens't "feel" like the same meal rehashed.

Don't overlook sweet potatoes as a variation on the theme.
And if you can find some white sweet potatoes, buy them!  Yummy.

Though hash is another good way to use up your leftovers.

I just did this too!  Vegan8 had a link to vegan chili cheese fries, where the "fries" were diced roasted potatoes, except I um...added real cheese.  It was SO GOOD though.

I have chili and potatoes all the time.  The wife doesn't like chili, so she puts other stuff on her potatoes.  Sometimes she'll bake an egg in one, for example.

We do chili on baked potatoes when we do a baked potato bar. I also put out grated cheddar and sour cream with these. Another thing we actually LOVE with chill is macaroni and cheese. Some in the family eat them side by side, while others blend them both together on the plate. Oh, the carbs! haha!
