Thanks for the link, N! Look forward to seeing what recipes are in there.

Great minds think alike. A few weeks ago, I was actually considering doing a throwdown on doing the SNAP challenge for a month ($4.50/day for all one's foods & beverages) http://cfbsnapchallenge.org/. While this years Food Hunger Month challenge already bypassed, its something one could do at any time.

While I am not proposing the challenge, here. It's interesting from a nutritional standpoint (as I'm a health educator w/a emphasis in nutrition) to see if and/or how one can do healthy on this amount; consuming all the necessary nutrients.

She also has another cookbook titled From Scratch.  More awesome recipes in there as well and most of them are cheap too!

Since the Kickstarter went well, you can now pre-order the print edition with an option to spend $5 extra and donate a copy to someone on food stamps.  This cookbook was a student's Master capstone project and she doesn't just want to take the profits and run -- most of her plan involves donating copies to nonprofits, so it's a good cause.  You can also just give 5 bucks and download the PDF.  I've made the zucchini fettuccine recipe about 4 times now and can't stop... it's so easy!
