My only issues with a condo are:
1. I hate hearing other people's music/TV's (I've only lived in cheap apartments so maybe this wouldn't be an issue?)

Could be an issue, depends on construction, etc.

Potentially an issue, but there are two aspects, A) does the savings on the condo (cheaper, cheaper insurance, etc) outweigh the additional HOA fee, and B) does the amenities a condo come with offset the HOA fee FOR YOU, in other words, if a condo comes with a pool, gym, and free cable and internet, does that mean you are not paying for those things and you would otherwise have joined a gym with a pool and bought cable and internet.  Also property taxes tend to be lower on condos versus SFHs, which may offset some or all of the HOA fees.

My only experience with FL condos is as a vacation property, in which case the amenities are important both in making it desirable for me to be there, as well as desirable as a rental property to rent to others.

If you are looking at the high rise condos built in say the last decade, decade and a half, I don't think you're going to have a problem.  At least in the florida condos I've been in, you can't hear anybody else unless they are being extremely loud.  If you're not on the balcony, it would be very easy to spend an entire day without hearing anybody else at all, and I've never had to deal with extended noise where you could hear somebody else's tv/music. 

I'm not sure if it's just the nature of the construction requires so much support (and hurricane resistance windows) that they are de facto sound proofed, or if you have to be in high quality construction to have that type of sound proofing.

I've heavily considered moving to Florida and buying a condo.  However, I wonder how an HOA board would deal with climate change.  I just can't see that going well at all.

Also, if you are looking in the Orlando area, anywhere near the parks, I was told my a few realtors that all condos are not eligible for a mortgage.  This is due to the majority of units being rentals.  I'm guessing this isn't really an issue away from Disney though.  But it is something to keep in mind.
