Best practice is to prepare lunches on Sunday for the week or take left overs.  Saves the hassle of the morning lunch prep grid.   We do lots of inexpensive soups this time of year.   Homemade chicken noodle,  potato,  chili soup,  veggie.

Thanks for the hint and piece of advice!
Soups are definitely the way to go: healthy, hot, good and inexpensive!

My grandfather was a famously frugal man, and his weekly cooking schedule was very simple.  He'd eat a steak on Saturday night.  Then on Sunday he'd make a giant pot of stew, and eat it for lunch and dinner until Friday (breakfast was always eggs and toast).  Rinse, repeat for 50 years.  You may wish to vary your menu (not having grown up in the Depression).

I live like your grandfather, no depression era memories necessary.

Breakfast is always 2 eggs plus lots of veggies fried in olive oil. Two cups of tea: one green tea, one peppermint.

I make a big stew of vegetables, a little ground beef and lots of tomatoes. Eat that with rice everyday for lunch.

Dinner is fried vegetables in olive oil, usually with some sour cabbage for sweetness.

Lots of fruit though: apples, bananas, mandarin organes, in the summer, nearly everything since its available (im in China).

I dont eat a steak on saturday nights thouh. Little too expensive. =)

Out of curiosity, are you an expat in China?

Enjoy the fresh fruits everyday!
