Great challenge Use It Up, I wish you much success!
I won't be joining you since we eat Flexitarian in our home and we're all completely satisfied with meat just 2x week(Wed and Sun and maybe lunch leftovers on a day after one of those days). I get plenty of other meals to experiment with vegetarian recipes without having to go to an extreme that would be extremely disappointing for my carnivorous hubby.
Next up on my experiment list is cottage cheese croquettes. I saw a lady in a wartime movie preparing rissoles and since I'd never heard of them I had to look them up. Just google risolles, croquettes and patties on any recipe site(preferably vegetarian or ethnic)and be amazed at all the awesome stuff! I had no idea there was so much variety beyond falafel, empanadas and veggie burgers.
I also highly recommend learning to make Chinese foods. I could eat homemade Spring rolls and pot stickers every night without becoming bored. ;)
