Keeping it simple for a busy week. Pretty much everything this week is roasted on a single sheet pan or made in the wok. Also looks like everything is vegan except the Halloumi cheese fajitas.

* Garlic tofu, broccoli, cauliflower stiryfry

* Roasted pesto gnocchi with vegetables & tempeh

* Halloumi fajitas (sheet pan recipe, so so good)

* Orange tofu bowl

* Sheet pan veggie sausage and root vegetable hash

* Boca burgers and salad

I also made a huge batch of pumpkin chili on Sunday to serve as lunches all week.

Saturday - tacos
Sunday - lasagna
Monday - tacos
Tuesday - lasagna
Wednesday - carnitas
Thursday -  leftovers, or spaghetti & meatballs
Friday - pizza

We are pretty basic, particularly after I've been traveling. Still jet lagged from trip to Tokyo last week.

My fridge freezer and pantry are becoming decluttered using this simple planning  the Meals method! Saving lots of money as well because I’m buying the loss leader sale items every week and planning meals around them. Usually seems to be chicken, pork, and/ or ground beef and a few veggies or fruits. This week it is boneless chicken breast, chicken thighs, avocados, grapes, cottage cheese. Last week it was bananas 25 cents a lb and honeydew melon and bone in chicken breasts and pork chops. Plus I’m using my small garden and chicken eggs more.  Super helpful. Thanks.  I was so organized that yesterday I picked up a box of graham crackers and made a cheesecake because I noticed cream cheese in the fridge needed to be used up! Cheesecake is so easy and it keeps the family satisfied and not running out to buy junk food as often to have a homemade dessert on hand   Peanut butter cookies are really easy too.

I'm off work this week, so I have the luxury of time for leisurely cooking and using up the glut of garden produce

Last night:  Salisbury steak with broccolini steamed and then quickly sauteed in the beef fat, slices of yellow beefsteak tomatoes with basil
Today: Roasted chicken with buttered tomatoes and fingerling potatoes, artichokes with garlic aioli
Monday: Pork tenderloin confit, lemon butter carrots and roasted eggplant soup
Tuesday:  Eggroll in a bowl (spiced beef and sauteed cabbage) with kimchi
Wednesday:  Chicken soup - maybe Thom ka gai?
Thursday: Leftovers
Friday: Salmon, sauteed kale and roasted purple sweet potatoes

Friday - kids had pizza, adults had burgers
Saturday - Adults went out, kids had chicken
Sunday - I'm making egg roll in a bowl over cauliflower rice
Monday - if I get time today, I'll make a chicken cauliflower curry
Tuesday - leftover egg roll in a bowl
Wednesday - leftover curry
Thursday - butternut squash risotto/mac & cheese
Friday - TBD

-Last night:  Smoked pork chops, sauteed baby spinach and asparagus, and keto cornbread.
-Tonight:  Freezer leftovers, veggie.  The leftovers are unlabeled so it will be an adventure.  I think it's some sort of chicken pasta Alfredo?
-Tues:  Ground pork and Italian sausage tacos with cheddar shells, veggie.
-Wed:  Broth.  Going in for a "procedure" Thursday AM.
-Thurs:  Something easy.
-Fri:  Take out from?
-Sat:  Smoked sausage link and veggie stir fry.
-Sun:  Grill/smoke something.

Continuing to eat down the kitchen freezer contents to make room for the half beef we bought.

@MountainGal - we have the unlabeled leftovers problem at our house as well. It's always an adventure to see what awaits you that evening. :-)

Ha ha!  Glad it's not just us.  I usually do pretty well at labeling w/ freezer tape and a thick Sharpe.  The downfall is when we are rushing around preparing to go away for the weekend and I quickly toss leftovers from the fridge to freezer in order to avoid food waste.

And yes, last night's was Crock Pot chicken Alfredo from a few months ago.  :)  The large container had angel hair pasta under it for DH, the smaller without for me.  :D  Served it with a bag of cauliflower from the freezer and leftover keto cornbread from Sunday.  The left-hand side of the bottom drawer is now empty and ready for beef.

Last week went very well on the home cooking front.
This week's plan:
Monday - Indonesian lentil soup with tortillas (done! and delicious)
Tuesday - probably the last of the soup
Wednesday - miiiiiight be a dinner out to celebrate spouse's end of busy season but if not, a frozen pizza
Thursday- either 12 bean soup or pasta
Friday - leftovers from Thursday

Breakfasts this week for me are overnight chia seed oats with berries, lunches are gardenburgers (or homemade zucchini fritters while they last) with edamame and tomato salad

M. Stir fry (using leftover roast pork)
T. Spinach n ricotta pasta (kid2 is off Bolognese sauce. Yay. Everybody else hates it and finally I can take the damn thing off the menu)
W. Turkey steaks, broccoli, mushrooms
T. Smoked cod, peas and potatoes. 
F. Pizza
S. Away
S. Some animal on the grill and grilled veg.

I am slowly reducing the amount of red meat we eat. Nobody noticed so far. Next week I am trialing a broccoli pasta on Tuesday.  And a different type of fish.

I've hit a slump on cooking, noticed myself falling into the same dozen recipes, so I'm trying to mix in some new things to get excited again.

Monday: Sweet potato soup (new recipe) - turned out pretty good, but it's an odd flavor.  Not sure it will enter regular rotation, we'll see how it freezes.
Tuesday: Spaghetti and turkey meatballs
Wednesday: Leek and potato soup
Thursday: Black beans and Spanish rice
Friday: Pizza
Saturday: Renaissance Festival with family
Sunday: Pupusas (new recipe)

Sunday:  Locally grown smoked pork roast w/ a side of 3 different veggies, two of which were from DH's garden
Monday:  Salmon (on sale), shrimp (e-coupon), calamari (also on sale), and veggie "fries" (coupon)
Tuesday:  Crock Pot teriyaki chicken, riced cauliflower
Wed: Leftovers
Tonight: Pizza w/ the ATV club
Friday:  Take out from?
Saturday:  Halloween party including cauldron chili and "sand-witches"
Sun:  IDK yet.

Shopping on Friday again! I like having a fully stocked kitchen going into the weekend. Plus I need to use up this frozen shrimp; we live on the coast and when it's a good deal I stock up:

*Shrimp Alfredo pasta with spinach
*Pork Chops, mashed potatoes, salad
*Shrimp bake, homemade rice a roni, green beans
*Spaghetti bolognese, salad, garlic bread
*Tacos, yellow rice, black beans
*Fish from the seafood market, rice or pasta, salad
*Eat out Waffle House one night, probably while mom's out of town Monday/Tuesday :)

That's the plan!

Sunday: Parsnip & leek gratin, roast chicken (strategically, so I can bring chicken salads to work and make chicken stock for Thursday's soup)
Monday: Leftover Chili and slaw
Tuesday: Steak, mushrooms & broccoli
Wednesday: Leftovers or eggs
Thursday: Kale, chorizo and potato soup
Friday:  Leaving early afternoon on a 7-hour road trip, packing stuff I can snack on while driving

It was a wild & crazy week, so hoping to get a meal plan in place & get back to a routine

Friday - we had grilled chicken & cauliflower riced stuffing, kids had pizza
Saturday - we had breaded chicken & tomato soup. We are trying to clear the pantry & the soup was given to us. It was the tomato/red pepper soup from Trader Joes, and was quite good
Sunday - salmon & brussels sprouts
Monday - chicken sausages & coleslaw
Tuesday - breaded chicken & tomato soup
Wednesday - leftover salmon & sprouts
Thursday - leftover chicken sausage & coleslaw
Friday - homemade pizza

Last night DH grilled our first cut from the 1/4 cow we bought from our neighbor.  The steaks were melt in your mouth delicious.  Served with the last of the garden tomatoes with broccoli on the side.
Tonight:  Salmon, shrimp, breaded calamari, veggie
Tues:  Leftover ham hock, beans and corn muffins from the freezer
Wed:  Chicken tenders, veggie
Thurs:  Out w/ a friend before the RAIDERS game
Fri:  Take out from
Sat-Sun:  Not sure yet

Busy week, just drove 7 hours home this morning, but I'm proud of my forethought since I wrote out a shopping list and meal plan while at dinner last night, and picked up fresh veg before I got home.  Plan is:

Tonight - we had brats, cabbage and carrots cooked on a sheet pan
Tuesday:  Stuffed peppers and salad
Wednesday: Same
Thursday: Roast chicken, asparagus and potatoes
Friday:  Leftover chicken and another veg, probably broccoli
Saturday:  Going out for my birthday

I'm off work next week, and I want to see if I can make it to next weekend without any grocery shopping.  Might have to get a veg or two depending on if anything in the garden is still edible or not.

Sunday:  Chicken and green chile soup
Monday: Homefry potatoes with chorizo and a side salad
Tuesday:  Leftover soup, probably
Wednesday:  Roasted cauliflower, carrots and pork chops
Thursday:  Spaghetti squash boats & broccoli
Friday: Salmon and whatever I can scavenge from the garden (leeks and Brussels sprouts or maybe parsnips & kale)

Monday:  Chicken/chorizo/kale soup
Tuesday/Wednesday: chili and salad
Thursday:  Not making a big deal out of it, probably a smoked turkey quarter, brussels sprouts and roasted potatoes
Friday: Going out for BBQ in lieu of doing the full spread on Thursday

Saturday - homemade pizza w/prebaked pepperoni. The pre-baking/crisping made a huge flavor difference
Sunday - chicken, potato, cauliflower curry
Monday - beef tacos, homemade pico de gallo & guac
Tuesday - leftover curry
Wednesday - leftover tacos
Thursday - we're having steak, potatoes, brussel sprouts & beans for a non traditional Thanksgiving

Last night DH grilled t-bone steak from the locally raised cow we bought.  OMG, so good.
Tonight:  Tuna, shrimp, sauteed spinach
Tues:  Ground beef (from the above mentioned cow) nachos made w/ pork rinds instead of tortilla chips
Wed:  Leftovers
Thurs:  T-Day trimmings.  I'm making 2 different kind of pies and a strawberry cheesecake.
Fri:  Leftovers
Sat:  Fathead pepperoni pizza
Sun:  Grill/smoke something

Was out of town the first week of the month, then over-bought some things when I got home, so have extra produce from last week.  This week I'll be working on using up extra veggies before they go bad. 

Tonight: Pork green curry, cauliflower rice
Sunday: Soto Ayam with seaweed noodles
Monday: Steak, parsnips  & Brussels sprouts
Tuesday: Ham and broccoli frittata
Wednesday:  Salmon, asparagus & potatoes
Thursday: Eggroll in a bowl
Friday: Chicken thighs, collards & beets

I normally cook on Friday, Saturday, Sunday, but a combination of jet lag & a crazy weekend schedule means I did no cooking. As such, this will be a "make the most of leftovers & freezer items" kind of a meal plan:

Saturday - we went to In & Out
Sunday - chicken sausages + ravioli
Monday - chicken sausages + soup
Tuesday - adults are both out at work dinners, kiddos will have burgers from the freezer
Wednesday - last of the soup, sausage & raviolis
Thursday - any remaining leftovers, or pizza
Friday - TBD

We head out of town on Saturday, so Friday will be any random collection of things that need to be eaten up.
