I love meal planning! I do most of it on Friday and grocery shop for what is needed on Saturday.
This week's plan:
My lunches: Swiss chard pie (subbed my typical spinach for chard as that is what came in my CSA bag)
9 yo's lunches & snacks that he takes to his all-day sports camp: Ham & cheese sandwiches, grapes, strawberries, carrot sticks, pretzel sticks, dried apple rings, KIND bar, sports drink
Dinners:
Monday- grilled chicken kababs with mushrooms and zucchini, coucous, lettuce, Cesar dressing
Tuesday- sausages (Weisswurst) with cucumber salad, left over couscous
Wednesday- grilled pork loin, peas, cucumber slices, air-fried potatoes
Thursday- left overs
Friday- WILD CARD (either leftovers, a frozen meal, or take out)
Saturday and Sunday I don't typically plan this far in advance, as it is largely driven by what's in my CSA bag that I get on Thursday.
Back up meals: Tortilla Espanola, Turkey & bean chili (These I have the ingredients in the pantry or freezer and can cook quickly)
