Meatless March challenge

We started this challenge on time, but didn't get to post it.

For the entire month of March, my family is not eating meat. Seafood is ok. Anyone want to join us?

We hope to:

-Save $
-support our health
-learn new vegetarian recipes to make it easier to eat less meat even after the challenge is over

How about we don't buy any new meat at our place - just eat whats in the freezer?

Well... we're not eating the meat in our freezer until April. I think eating the freezer meat fails the badassity test, especially for the third point: forcing ourselves to find more ways to cook vegetarian.

I have to laugh a little.  I was vegan for 15 years, and started eating fish, yogurt and eggs in my early 30's.  Now, I roll with that but do have the occasional turkey bacon or get some grass fed beef sometimes at the market.  I eat meat maybe once every other month.  I just bought turkey bacon on sale.  FAILED this one, and I should have been a shoe-in.  Hehe.  But I will share this. It's the best, easiest vegetarian soup, ever, on the planet.

Me too. Just started eating animal products this past year, and managed to fail this one with (hold your breath) 99 cent canned sardines.

I like white bean and spinach soup a lot. I'll throw my favorite recipe out here too, cause it's a good one for the freezer: burritoes with black beans and butternut squash. Sounds funny, but it is good.

Haven't eaten meat in 6 months. Dropped all animal products in January.

I have been vegan for 12 years.  I hate bland food, and a lot of vegan/vegetarian recipes you find online are exactly that.  This is a red beans and rice recipe that is a staple at our house because it is cheap and filling and good:  http://veganrecipes-idahovegan.blogspot.com/2012/04/vegan-red-beans-and-rice.html

Great challenge Use It Up, I wish you much success!
I won't be joining you since we eat Flexitarian in our home and we're all completely satisfied with meat just 2x week(Wed and Sun and maybe lunch leftovers on a day after one of those days). I get plenty of other meals to experiment with vegetarian recipes without having to go to an extreme that would be extremely disappointing for my carnivorous hubby.
Next up on my experiment list is cottage cheese croquettes. I saw a lady in a wartime movie preparing rissoles and since I'd never heard of them I had to look them up. Just google risolles, croquettes and patties on any recipe site(preferably vegetarian or ethnic)and be amazed at all the awesome stuff! I had no idea there was so much variety beyond falafel, empanadas and veggie burgers.
I also highly recommend learning to make Chinese foods. I could eat homemade Spring rolls and pot stickers every night without becoming bored. ;)

I eat a lot of chicken breast. If I switched to seafood I don't really think I would save money or eat healthier. So why limit your meat intake to just seafood? I understand the idea of switching from animal protein sources to plants, but the seafood thing doesn't make sense to me.

I've always found seafood to be noticeably more expensive than land animals(unless you're eating steak or some expensive cut.)
Unless you live right on the coast or something where you can essentially go to a farmer's market of the ocean.

I'd join in but I bought chicken over the weekend and also have some bacon that needs to be finished this week. I'm trying to go back to eating all veg though.

GregK, I made those enchiladas this afternoon.  OMG!  Love them!  I think I will skip the chipotle sauce next time, and use corn tortillas instead of rice.  These are brilliant!  I'll be eating them all week, I'm glad they're so yummy!  Thank you for sharing!
