Off-campus housing using ESA or 529.

I know that money in a ESA or 529 can be used to pay college off-campus housing assuming the student is a full time student and only if the costs don’t exceed what the school charges for room and board. I am curios if anyone has done this and what documentation they needed to support the expenses. So if kid attends college and lives off-campus how much documentation for expenses do you need? Rent is easy to document, but "room & board" includes more then rent. Assuming, say, the college says "room & board" is $5K per semester, do I need receipts for all expenses occurred? Rent, utilities, food, etc.? Does it matter if the receipt is in my name (the person mostly paying the bills) or my kids name?

Essential my question is a record keeping question. I do find IRS publication 970 which covers this obtuse.
