Home made Chocolate chia seed pudding* and a serving of almonds (24).

(*Blend 3/4 c soy milk, 1/4 c frozen cherries, 1 tbsp. cocoa powder (unsweetened), 1 tbsp. maple syrup, & a pinch of salt. Add 2 tbsp. chia seeds. Stir, let sit 1 min, repeat stir/sit x2, refrigerate over night.)

A bagel I got for free a few days ago from Panera. They had a free bagel available to anyone with a MyPanera rewards card every day in January, so I took advantage.

It wasn't everybody- I think it was select people. I didn't get that, but one of my friends did.

One hardboiled egg. One cup coffee. Bowl of oatmeal made with 1/4 cup rolled oats, 1/2 cup milk, 1/4 cup walnuts. Everything purchased at Aldi.

Do you put the chia seeds in the tea? How much chia?

I remember reading that the recommendation is 2-3 tablespoon of chia seeds a day. I put 1 tablespoon in my cup of green tea and 1 with my salad at lunch. Yes I make the tea, then put in 1 tablespoon of chia seeds. Stir well till the seeds are evenly dispersed and start to swell(about 30 secs). Wait 10 mins for the seeds to expand, then drink.

Every workday morning I eat 3/4 cup oatmeal with ~1/8cup raisins,  and 3 friend eggs, ~10oz orange juice.

It's a routine. I wake up and flip the switch on the kettle, turn around and turn the pan onto med/low heat. Go to bathroom. Come back, crack three eggs into the pan, turn around and pour hot water into bowl with oatmeal/raisins, cover bowl with small plate. Pour orange juice. Put together my lunch, (left overs from night before, orange, apple, banana, mixed nuts). Flip eggs like a pro. Set lunch box on counter. Open MMM forum. Slide eggs off pan onto plate covering oatmeal, carry bowl/plate and o.j. to table, eat while perusing MMM.

Clean bowl/plate/glass and set next to kettle, prepare oats/raisins for tomorrow, fill kettle to max and turn on (so wifey has hot water when she gets up), kiss wifey goodbye, and off to work!

Hashbrowns (1 potato) and 3 eggs over medium.

Usually I eat 4 eggs and 2 strips of bacon, but we were out of bacon and running low on eggs.

I prep cook my breakfast on Sunday using Muffin tin eggs! 1 egg per hole and season to taste and add whatever you want. Turkey sausage, veggies, cheese etc. In the over for 18 mins and IM good to go for a week. 1 of these eggs in the morning with salsa and coffee at work.

2 slices of honey wheat toast - bought a loaf at Aldi (actually 2 - froze one) for $.25!  Not sure why they were marked down as they were still not close to the sell by date.  It's really good!

75% of the time I have steel cut oats, a spoon of natural peanut butter and a fruit. This morning however I had a wrap with a homemade Mediterranean chickpea paste, sliced tomatoes and an apple on the side.

If you count it as a breakfast a coffee with quite a bit of whole milk in it.

As for actual food for lunch I had 1/2 cup(dry) long grain white rice with 3 oven baked eggs with runny yolks mixed/scrambled in along with a little soy sauce, mirin and rice seasong as toppings mixed in. Usually I just do the rice and eggs with some salt but I tried the toppings and it was a nice change from the usual.

Nearly every work day: banana when I first get to work, then around 10:30 I have thawed fruit (still going on cherries and raspberries picked over the summer - free!) with 1/4C quick oats, 3/4C plain (home made) yogurt and 1/3C Harvest Crunch on top (big box $6 at Costco lasts a long time). Sometimes I add a bit of applesauce to the mix. It all fits nicely in a 500ml container.

This with tomato slices and spinach salad is my go to lunch, though I never tried it with butter.

Every single day we both have a slice of homemade bread with peanut butter (along with multiple cups of coffee). Have been doing this for slightly longer than mm has been eating her tacos, though the bread was storebought until three years ago.


But I've had the flu and have let us run out of bread for the first time in several months, so I'm about to go scrounge. Luckily I have oats in my baking supplies, so I'll probably have oatmeal. He'll probably get a slice of the emergency half loaf of store bread I think I still have in the freezer for his toast - I can't stand it anymore because it tastes so sweet.

Most mornings I have 2 eggs, fried in coconut oil, with salt, pepper, and spinach tossed in.  Heat the pan while starting the coffee, toss the oil, eggs, salt, pepper, and tore up spinach in, let cook on medium low while making my coffee (we have a bunn...yay quick coffee), flip eggs and turn off burner, feed dogs, throw eggs on plate to eat.

Simple, cheap(ish), and they keep my blood sugar stable...


Occasionally on Saturdays we will make something more elaborate.  Also, husband eats oatmeal or pb toast most mornings.

About every 6 or 8 weeks I mix up a batch of burritos and freeze them. When I wake up, I put one in the toaster oven (325F for 50 minutes) then go for my 3 mile walk. When I get home, I shower, pull out the clothes I will wear, make my sandwich for lunch, then eat the burrito just before leaving for work. Here’s how I make them:

•   LOTS of beans (black and kidney). Put them in a colander to drain off as much liquid as possible.
•   Plenty of Rotel. I like it spicy, so I prefer the hot Rotel. Again, drain liquid
•   Chopped veggies (green pepper, onion, tomatoes, diced jalapenos)
•   Low fat ground turkey
•   Egg substitute (or use real eggs)
•   After cooking the eggs and turkey (separately), mix everything together in a large container.
•   Spoon mix into a tortilla, sprinkle with shredded cheese and freeze.
I use tin foil—perfect for toaster oven but if you’re going to microwave use something else.

I could eat them every day! (oh wait, I already do)

Home made plain yogurt with home made granola, cup of drip coffee.

The granola was made from Kim Boyce's seeded granola recipe in "Good to the Grain", mentioned in this review:

I omitted the wheat germ as I couldn't find it in the bulk bins at Whole Foods, and used smoked paprika instead of cayenne. Next time, I might omit the black sesame seeds and poppy seeds as they were the most expensive by weight, and added almost $6 to the cost of the batch.

I eat more of a brunch on the weekend.  Today it was a mushroom, jalapemo, sausage and blue cheese omelette and a side of sauteed beet greens.

Breakfast "cookies" I made myself with oatmeal, soft bananas, peanut butter and other stuff I needed to use up like dried coconut and fruits. Brought them to work and everyone loves them.

I keep mine pretty simple, today was a cup of yogurt and berries. Other days it might be oatmeal and berries or an egg/avocado on toast with a banana.

Coffee w/ cream (no sugar) and sprouted bread toasted w/ full-fat cottage cheese on top.  Have this most days for breakfast - switch up my cottage cheese toppings - my favorites are garlic powder and oregano, regular ol' salt n' pepper, and cinnamon.

For breakfast today, I had homecooked spiral pasta with fresh tomatoes. One of my staple meals. I hardly get tired of eating it.
