Chicken pot pie - 8-12 great meals for under $8

You will need
9X13 Pyrex
2 pie crusts $2.79
2 lbs chiken or turkey, cubed or shredded, cooked or uncooked, it doesnt matter $(1.00-4.00)
1 jumbo can of cream of mushroom soup $1.00
1 baged of mixed frozen veggies $1.00
1 medium onion (diced) $.25
1 egg white $.25
2 tbsb butter (or turkey fat)
salt and pepper


If you get everything on sale you can get the price down around $4-5.

In a large skillet or dutch oven add 1/2 of the butter and chicken or turkey saute for about 5 minute then add onion. (immediately add onion if using cooked chicken or turkey)
Once turkey and onion is nicely browned add the can of cream of mushroom soup and the frozen veggies. add salt and pepper to taste. simmer about 10 minutes.

Meanwhile
Preheat oven to 350
Using the remainder of the butter, turkey fat or cooking spray grease they 9X13 pyrex
prepare the pie crust per box instructions, using about 60% of the dough roll out to a rectangle to cover the bottom of the pyrex.
Brush with egg white, bake for 10 minutes.

after 10 minutes remove bottom crust from oven and place filling into the bottom crust.

roll out the other 40% of the dough into a top crust and place on top. cut slits in the center to vent.
brush top crust with egg whites

At this point you can bake immediately for 50-60 minutes at 350 or refrigerate and bake later. if you do so it will have to bake a bit longer.

Thanks for sharing!  Normally we make our pies in individual ramekins and save the money by making pie crusts and the sauce base ourselves, but this is a pretty good and simple recipe! Might have to add pie to the meal plan for the week.

Yeah, Ive thought of saving money on the crust. I'm not sure you can save much on the base with the kroger cream of mushroom for a dollar for about 26 ounces. I have dont the ramicans too. Its great, but more work. What is your crust recipe?

Flour, butter, baking soda. Simple. At $1 per serving listed originally, one can buy premade pot pies for 80 cents (cheaper on sale) so not sure it's worth the extra effort for homemade.
