It is COLD here. Last night, I didn't want to go out shopping, so I was scrounging around in the fridge. I found leftovers from holiday entertaining: half of a smoked Gouda wheel, some camembert, and some sharp cheddar. I also have tons of bell peppers left over from making sausage and peppers for a NY party at my sister's.
So I made three-cheese mac and cheese, which my kids LOVED, with orange and red pepper strips and dip on the side. It was a huge hit, and the ingredients were all from things I would have let go bad or just preemptively thrown out this time last year. Whoo hop!!!
