Title: DIY everything bagel cashews

I'm recovering from surgery and staying at my partners in the city. There is a store within walking distance called Natural Grocers and they sell a small bag (8 oz?) of everything bagel flavored roasted cashews for $8.99.
Well, they are pretty darn good, but too expensive so I looked around for recipes and made a few batches and here's what I came up with:

Unroasted, unsalted cashews from Costco
Everything Bagel spice from Trader Joes
One egg
salt, sugar, nutritional yeast

Separate the egg and whisk just the whites (feed the yolk to the cute dog)
Add 2T of EB spice mix
Add 1/2 tsp white sugar, 1 tsp of nutritional yeast, and a big pinch of salt (I found the EB spice I was using to be a little low on salt, YMMV)
Mix in 3 cups of cashews
Lay in single layer on baking sheet (I put parchment paper down first)
Bake at 300* for 15 minutes, remove and stir
Bake for another 15 minutes, remove from oven and let cool on the sheet
They come out soft but harden as they cool.

Try not to eat them all in one day.

Not too hard and absolutely heavenly for the first two hours when they were fresh. I ate three bagels in a row when I first made them. Just above average when they're older.

I haven't had a good bagel in years, since I switched to a gf diet.
Notice I didn't say I haven't had a bagel in years!
I didn't know that everything bagel spice was "a thing'.

My Costco has Everything Bagel spice now, $6.99/17.8 oz, as compared to Trader Joe's at $3.49/2.3 oz.

My cooking procedure is now 10 minutes @ 300*, then remove and stir, trying to flip, then another 10 minutes and stir, then another 10 minutes and done. This gets the perfect crunch without burning, but all stoves are different, YMMV.

I also tweaked the recipe to 3 T of EB spice, and took out the salt and the nutritional yeast. I use overflowing cups of cashews, so a little more than 3 cups of nuts. If there's not enough nuts and spice then they taste a little "eggy"; the ratio is important.

The whisked egg is the key. I tried different techniques using oil to get the ingredients to stick to the nuts, but they just turned out too oily, especially since cashews are so oily already.

The parchment paper is really helpful because I can use it like a funnel to pour the nuts and the spices into my storage container.

I also saw that my local co-op is carrying the finished product in their bulk section, $19.99/lb!

These things are seriously good.

I read this post today and thought about trying it. I'm at Aldi right now and they have plain cashews for 6.45/lb and everything but the bagel cashews for 7.18/lb!

This reminds me of the movie “Everything Everywhere All at Once”.

I will never think of everything bagels the same way ever again. Or hot dogs.

I recommend the movie, but cannot provide more context without sounding like a crazy person.
