bread machine recipes

A coworker just gave me his wife's bread machine, and I am itching to try it out. The recipes in the manual for this particular brand (Hitachi HB-B201) don't look fun to me, plus the measurements make no sense.

Is it possible to just take a normal bread recipe and make it in a bread machine? It appears that the major difference is the order in which you put the ingredients. I also live in a humid climate and am thinking of reducing the amount of water a bit.

It does the kneading and the rising time as well, and anyway this one is free. Should use less power than the big oven, too.

I love my bread machine.  I love having easy fresh bread for the whole family (me!) and all without heating my whole oven and whole studio apartment.  The recipes designed for the machine are designed for its capacity.  Make sure you are using a recipe designed for a bread machine with the same size loaf pan.  The machine has different yeast and flour needs than hand kneading.

Hey! Thanks for the recipes/advice. I made my first loaf of bread yesterday. Followed the bread machine directions but with 1/2 whole wheat. The loaf came out a little dense, though still pretty good; I live in a humid climate and I've also read that whole wheat flour needs extra gluten to come out fluffy. I'm going to keep working at it.

I can't believe how easy it is to make bread in that thing. It was as easy as throwing together a crock pot meal. And where I live (Hawaii), it's hard to find bread under $5/loaf, so I know I'm going to come out ahead on my grocery bill, especially if I do what everybody on that other thread said and buy the supplies in bulk. We are big PB/J fans in my house, so I think this is going to help the grocery bill a lot. Huge MMM win (I asked around at work for the bread machine after being inspired by the MMM bread machine blog post).

My favorite source for recipes is the Bread Machine Magic series. I have a 1 lb bread machine and it has recipes for 1, 1.5 and 2 lb loaves. It also helps you troubleshoot the recipes.

I highly recommend purchasing vital wheat gluten for your recipes. It makes a ton of difference in the end product (especially for WW loaves). You'll need 1-2 tb per recipe.

Ha! I manipulate my bread so it'll fit in my kids' lunch containers. My go to recipe follows:

3 c ww flour
3 T olive oil
1-1/3 c water
1-1/2 t salt
1 T sugar
1-1/2 t bread machine yeast

To make it fluffier, add a little more sugar.

Following, for two reasons. I made the hamburger buns offered on another thread this week and they were awesome. And, I was given a bread machine that I have never used. Bonus reason, I have all the ingredients on hand. Score!
