Tempeh, or, protein to grow your mustache!
« on: January 07, 2016, 05:55:53 PM »
Anybody else just love this stuff?

For those who aren't familiar with tempeh (for more info: http://vegetarian.about.com/od/glossary/g/Tempeh.htm), it's made of soybeans which are fermented / colonized with microbes. It's got a flavor that's kind of hard to describe, but if you imagine soybeans with a heartier, nuttier flavor, you would be close.

Tempeh has many qualities that make an ideal protein source for MMMs:
-Only costs about $5/lb, and can be found in most healthy-food type grocery stores I've been to.
-Stores for over a month in the fridge (I just can never remember to defrost meats the day before, so this is a big plus for me).
-100% vegan protein source, so not only is it delicious, it's also healthy and good for the earth.

I just made this for dinner, and it was really good!

teadirt's Chipotle-rip-off bowl with Tempeh:

1 pkg (8oz) Tempeh
1 onion
1 bell pepper
3 cloves garlic
salt & pepper

Cook in a skillet on med-hi heat (I use my cast-iron) until everything is nice and golden brown (I like it just a little bit charred).

Then, combine with rice, lettuce, hot sauce, sour cream, and cilantro, and enjoy!

I love tempeh! Toast some cubes in a skillet and let chill.  Then toss with a chopped up apple and a couple of diced stalks of celery.  Add a quick dressing of lemon juice and a little chopped fresh mint or basil, maybe a couple drops of stevia extract.  Makes an amazing lunch and is super easy.

I love tempeh and haven't had it in years - one of those things that's unavailable here. I looked into making it and decided it was just too much trouble. Enjoy!

Tempeh is great.  Wife and I went vegetarian several years ago after lifetimes as full-bore carnivore.  I have been amazed how quickly and easily our grocery bill shrank.  One of the most under-discussed ways to cut your monthly expenses.  Even at restaurants, the difference between two cheeseburgers and splitting a large salad and a flatbread is phenomenal (and much better for you).

If anyone is looking for some new, inexpensive recipes, I recommend "Good and Cheap" free pdf cookbook (http://www.leannebrown.com).  The purpose of the book is to show how you can eat cheaply, easily and nutritiously on around $4/day.  It's certainly not a vegetarian cookbook, but so much of it is "accidentally" vegetarian because meat is the main cost of so many meals.

Thanks for that link! My grocery/restaurant spending every month is the biggest low-hanging fruit in my budget. I'll be using this :)

My favorites are the eggplant pasta, vegetable jambalaya, and cauliflower tacos.  Enjoy!

I always liked it, but it gave me headaches so I stopped eating it. Something about the fermentation I hypothesize, since I eat lots of other soy products without this reaction.

Love it with chipotle aioli made vegan style. Tempeh is like a treat when I feel like spending a little more at the store. I wish I could make it myself.
