A literal reader recommendation: my girlfriend got J. Kenji Lopez-Alt's The Food Lab: Better Cooking Through Science for Christmas, and it's awesome. I already knew him from his time at Cook's Illustrated and his ongoing gig at Serious Eats http://www.seriouseats.com/the-food-lab (http://www.seriouseats.com/the-food-lab), but the book is very readable and overturns so much of what we think we know about how to cook. Even a single tip (like, how to cook pasta in very little water and why) has improved my cooking and will save me lots of time and energy.

If you can find it at your library, or convince a rich friend to get it, go for it! Much of the benefit is in changing your understanding of the principles underlying cooking, so even if you don't own your own reference copy, you'll come out ahead.
