Last night, not right now, but the clean-out-the-pantry dal I made turned out really well.


Yellow curry paste (maesri brand, but from the freezer because I never use a whole can), onions, garlic, dash of fish sauce and lime juice. Pound of lentils, about half a pound of "fresh" (starting Tao wilt) spinach, about a quarter pound frozen mixed veggies (the cheap stuff: carrots, corn, green peas and green beans), and the dregs of some quick-cook barley I tried, maybe a cup or so. Delish.

Made vegan brownies at the weekend to bring to a picnic birthday party - everyone loved them and I will definitely be making them again soon. Recipe was from Deliciously Ella, haven't read this thread through yet so not sure if that's been mentioned yet. Basically just dates, nuts, maple syrup and raw cacoa powder all blended together. Fabulously chocolatey. Even if I didn't use the type of dates she recommends (added a tiny bit of water just to help them along) and used mixed nuts instead of pecans.

I also made a white bean salad (from mortgagefreeinthree blog, which I really liked. Beans, tomato, parsley, black olives, red onion and dressing made from lemon juice, water, vinegar, tahini and garlic. I was surprised at how creamy the dressing was. Even tasted good the next day when I scoffed all the leftovers. :)

I got a vegan meal at work today. Rice with peas, corn burgers, with a tomato sauce and pineapple and a caramel soy dessert. Was not bad for 4€ total. Could definitely make something cheaper and tastier at home but I was totally full and it was easy.

Last night for dinner we had black bean "burgers" (no buns, just patties and they were not at all burger-like but still tasty), a slaw salad (cabbage, carrots, a couple herbs and spices, and oil/lime/vinegar), and rice.

Kids loved it and it fed four of us for... I dunno... $2 or less? Beans were dried and therefore very cheap, cabbage is 59c/lb and we used maybe a 1/2-2/3 lb, 2-3 carrots is another negligible amount, rice... not sure, but also very cheap. Herbs were either from the garden or small portions of the huge bundles we get from local "ethnic" store for $1. I think the lime we used for dressing was probably the most expensive thing.

 Inspired by someone mentioning a chipotle bowl on here yesterday – which I've never had, as I've never been to a chipotle. But, rice, spicy beans, onions and peppers, kale and spinach, all topped with salsa. Yummy.

2 X eggplants chopped and fried for a while on medium high in olive oil until browning at the edges, lower heat and continue to cook until soft; add 2 tablespoons or so of miso paste, then finally add 4 garlic cloves and cook a further five or ten minutes.

Rich and filling as a side dish.

Making this tonight

Creamy Carrot Soup (serves 2) -- Oats are the magical ingredient in this soup. They give the soup a texture it wouldn't otherwise have and also impart a lot of creamy flavor without using actual cream. This soup also whips up in an instant.
1 lb carrots, peeled and sliced
1 small onion, diced
1/4 cup instant oats
1/2 cup non-dairy milk (such as fat-free soymilk)
1/2 tsp ground ginger
1/4 tsp allspice
salt and pepper - to taste (optional)
In a medium saucepan, combine 2 cups of water, carrots, onion and oats over high heat. Bring to a boil then reduce to medium. Continue to cook, stirring frequently, until oats are cooked and carrots are fork-tender, about 5 minutes. Transfer to a blender, in batches if necessary, and blend with non-dairy milk until smooth and creamy. Add extra water or non-dairy milk if needed. Return soup to sauce pan and add spices. Gently reheat and add salt and pepper to taste if desired.
 
Note:  sometimes I add a little sweet bell pepper, other times I add a half an apple or pear.  You can sub a potato for the oats too :)

Corn chowder (from Joy of Cooking modified to be vegan)


Ingredients
2 cups whole kernel corn
1 can cream corn
1/2 cup chopped bacon (you can substitute 1 tablespoon butter or canola or grapeseed oil)
1 medium onion, chopped
1/2 cup chopped celery
2 medium potatoes, peeled and diced
2 cups water
Salt and pepper
1/2 bay leaf
3 tablespoons flour
1 1/2 cups plus 1/2 cups of cold milk
Salt and freshly ground black pepper
1/2 cup chopped parsley (optional)
Save a shopping List

directions
1. I cook this without oil
1. Put bacon, butter, or oil in a saucepan, and turn heat to medium-high. When bacon has rendered, or oil is hot, add onion and celery, and sauté until golden brown.
  Saute celery and onion in a dry pan over med to med high heat,  add a little stock or water if needed.
 
2. Add potatoes, water, bay leaf, along with a sprinkling of salt and pepper, and simmer.
 
3. While potatoes are simmering, mix the flour and 1/2 cup of plant milk together in a separate bowl. When potatoes are tender (about 30 minutes), bring to a boil, and add the flour and plant milk mixture. This will thicken the soup.

 
4. Add 1 1/2 cups of plant milk and both corns. Heat, but do not boil the soup.

5. Taste, and adjust seasonings. Garnish with the parsley, and serve.

Having lazy meals. Bananas this morning. For lunch some whole wheat bread with Ajvar (a savory roasted red pepper and eggplant spread) with tomatoes and some pears after.

It is from the website. I don't have either book, but am probably going to buy the newer one. I never know what to bring to a party, and all the recipes sound delicious.

Side note: I just tried the coconut curry soup recipe from the website and it was so easy to make. My cousin likes to brag about how it takes her all day to make coconut curry soup, but mine tastes just as good. These are the only two recipes I've tried from thug kitchen.

leftovers too small to satisfy alone so I combined

veggie yakisoba
white rice
and
salad (romaine, shredded carrots, cabbage, granny smith apples)

put it all together and add teriyaki sauce and chili paste - it fills the void and wipes out the leftovers :)

 Fabulous leftover Thai bowl from the overpriced fancy place in the big city. This is not a request for a face punch; this was my reward for surviving outpatient surgery yesterday afternoon. Besides, my husband and I went on our first date there back when we lived in the aforementioned big city.

A new salad experiment of mine! Black rice,  mixed greens (kale, arugula, chard, spinach and lettuce), shredded carrots and oyster sauce. I found myself a new staple meal!

I'm not eating it yet (it's in the oven), but a crustless quiche with veggies. It's not vegan (has eggs, milk and cheese) but is definitely vegetarian.

Not eating it *right* now but I am obsessed with steel cut oats (I like mine creamy so do 4 cups of water to 1 of oats) tossed with frozen cherries, a drizzel of honey, cinnamon and plenty of chopped walnuts.

Also, when in a pinch I love lentils; onions, garlic, tomatoes, lentils, carrots and potatoes all cooked together. So simple and so good. 
Another for when I'm pressed for time or ingredients: sauteed onion, garlic, chopped zucchini and tomatoes tossed with pasta.

Oatmeal cooked with almond milk, dark cherries, and maple syrup. This has become my standard breakfast (though the type of fruit I use varies depending on what I have on hand).

I'm thinking my meals this weekend will consist of refried bean quesadillas with homemade refried beans, homemade veggie pizza, and maybe a frozen veggie lasagna that I made back in August with veggies from the garden and then froze for a lazy weekend during the winter.  I'm feeling lazy...:)
