What Vegetarian/Vegan food are you Eating Right Now?

I have mostly enjoyed the "What are you eating right now?" thread.  However, because I am a vegetarian, I thought I would enjoy a vegetarian/vegan version even more.

I'll start off:

I am eating steamed carrots as well as sauteed onions and steamed collard greens.  Soon, I will begin feeling the effects of all the vitamins and minerals from this meal traveling throughout my body to do their good work!

I just ate the most typical Dutch dish there is; it's called hutspot. It's carrots, onions and potatoes. And I always throw cheese in it, instead of meat.

Made a lovely lentil soup for dinner.  I use the basic ingredient list from the Moosewood Cookbook, substituting with what is in the fridge or cupboard, tossing it all in a crockpot.  Accompanying it was challah--not vegan because of the egg in the dough and egg glaze brushed on top.

In November I bought a bushel of apples that have been living in my garage. We're at the bottom of the box and the apples are getting soft.  So I made applesauce over the weekend (processing it in a water bath) and will make apple chutney tomorrow.  I am going to try this recipe:

Supper tonight was pizza with a homemade crust, spinach, red onion, red pepper, artichoke hearts and nutritional yeast.

Not vegetarian here, but working my way through a big pot of dal: pound of celery, half pound of chopped frozen spinach, pound of lentils, garlic, salt, and yellow curry paste to taste cooked in just enough water to cover. Yum for days. Had some with cornbread for lunch, which was geographically confusing but delicious.

Black bean soup. I found a pound of dry beans in the cupboard and wanted to use it up before I go back on the low carb. I put a pound of turkey bacon in it it because I wanted to use that up too, but it's not  required.

Just had roasted chayote. I had drizzled in with a bit of olive oil, cayenne pepper and salt before putting it in the oven. Mmmmm...

I had to google chayote, as I don't think I've have ever heard of it before!  Looks interesting.

I am eating steamed carrots and quinoa.  I'm down to the last few items in my kitchen, as I do not want to buy more groceries this month.  I've spent $178.45 and my goal is to keep it under $180.  Glad tomorrow is February!!

I have renamed it "Everybody Loves Chole" because I cannot imagine anyone not loving this stuff.

The recipe calls for cans of chick peas but some of us choose to begin by soaking chick peas the night before and cooking them in the morning.  Also, there are a bunch of spices but if you have an Asian grocery near you, there is no need to break the bank to acquire them.

I guess I'm a day late, but Sunday we had crockpot dal and had the leftovers for lunch yesterday. we aren't even vegan but occasionally it just happens... and this was delicious! it's like healthy comfort food.

Oh, I almost snorted milk when I read this post! I've been a vegetarian for over twenty-five years. I poured a bowl of cereal this morning but forgot to eat it. I just now got up, dumped milk on it, came back to the computer and saw this question. I'm ashamed to report that at this time of day I'm sitting in my bathrobe eating a bowl of "naturally flavored" Chocolate "gluten free!" Chex! Despite the presence of a full box of Almond Milk right beside it, I absent-mindedly grabbed the family jug of "moo-cow" milk to boot.

Full disclosure: I bought the Chex for a recipe at Christmas, didn't use it all and re-discovered it in my pantry last night. I can't let it go to waste, can I? I was dressed once today, but I have to change for a board meeting this afternoon, so I just threw on a robe between costume changes, like I'm an actor or something...

It probably doesn't translate, but the timing was priceless on my end. Thanks for the chuckle.

Not right now, but just a little bit ago, I had oatmeal and quinoa with a couple splashes of soy milk and some blackstrap molasses.  I cooked up a big batch of oatmeal (3 cups when dry) yesterday, and had cooked a big batch of quinoa on Saturday.  So I had about 1.5 bowls of half oatmeal and half quinoa this morning.  Yum.

Isn't it the best? I always throw some popped Quinoa and chia seeds in. I did make a vegan version for our granola bar at our wedding that was just made with coconut oil. It doesn't have the butteryness but it went over really well with everyone!

I'll be keeping up with this thread for inspiration. We aren't vegetarians but tend to eat very little meat, and when we do use it it is more of a flavor or accent. I would say about 90-ish% of our cooking is meat-free but still use butter, milk and eggs.

Working through bulk order of: organic corn flour, pot barley, quinoa, Pinto beans.

If anyone has some favorite recipes and would like to share, that would be awesome!

On the menu tonight; Roasted butternut squash, roasted carrots and Green Potatoes - perhaps with a lentil soup.

Dinner tonight is rutabaga and split pea soup.

Both recipes are from Isa Does It! a cookbook I'd highly recommend for easy-to-prepare vegan eats.  The butternut squash alfredo, sweet potato gnocchi, sweet potato kale curry, and black eyed pea and collards tacos are all delicious!

Soon I'll make a baked egg-stuffed tomato, and dinner will be chickpea and spinach curry with freshly made garlic naan.

Lentil tacos. 1 cup worth of lentils gave me 4 meals, and a heck of a lot more filling than the rice+bean burritos that were my Mexican staple.

Tonight is going to be our leftover veggie curry (rice, mushrooms, asparagus, and green beans). Kiddos will get quesadillas and leftover mac&cheese based personal preference.

We still eat meat, but oddly more for lunch than dinner.

I'm drinking tea and eating vegan oatmeal snackies that I made this afternoon for the kids, and then promptly fell in love with myself. I started with a banana-nut oatmeal cookie recipe and replaced the egg with ground flax and water, the butter with coconut oil, the AP flour with whole wheat, and then lowered the sugar by half. It was such a hit that I've compiled a few batches of the dry ingredients into jars so I can make more pretty quickly.

Dinner was portobello mushroom burgers on homemade buns, roasted potato wedges, fruit, and (non-vegan) cole slaw.

:) Yep! While we haven't been meat heavy, most of my food lately has had some form of meat, usually just broth.

I am not a vegetarian, but today I'm eating a Kissimee Salad: spring mix, carrots, bermuda onions, oranges, strawberries, dried cranberries, crumbled blue cheese, and pecans.  Balsamic dressing.

With a coke.  (Win some, lose some.)

Earlier I made soup with all the veggie remnants in my frig and some vegetable stock. I puréed it with my immersion blender, added sriracha and diced avocados. There was cauliflower and potatoes (white and sweet) in there so the end result was creamy deliciousness. Plus the frig is nearly empty -- just in time for a trip to the farmers market in the morning.

Homemade vege lasagne, full of mushrooms, zucchini, yellow capsicum and cherry tomatoes which I pan fried before combining with a homemade pasta sauce from the slow cooker. Layered with pasta and bechamel sauce and topped with plenty of cheese.

Just had breakfast:  oatmeal and kamut, with soy milk and unsulphured blackstrap  molasses.  Oh, with a few almonds and sunflower seeds thrown in.  Yum.

Kamut with steamed carrots and steamed asparagus.  With a bit of olive oil drizzled on top, and Bragg's, and black pepper.  The carrots (organic) are so sweet they could be candy.  Yum.

Ate half of a kiwi at about 12:15 and just had the other half (at 2pm).  Yum!!  Kiwis are delightful (the fruits, and probably the people as well).

Last night we had sesame slaw (red cabbage and edamame) with pan-fried seitan and noodles.  It was awesome and reminded me that summer cabbage from the CSA is coming....eventually.

I just had a handful of crisps (potato chips) and am about to have a big salad with some leftover brown rice and veggies. Sriracha and maybe vegan mayo on top.

Occasionally Hubby gets "veggie" cravings so last night our entire dinner consisted of a few french fries and an entire 9x13 tray of roasted Brussels sprouts:)
