Agedashi tofu! (Well, the meal wasn't 100% veg as the broth that goes with it involves fish flakes.)
But, I had to mention it as this is the first time I have tried preparing tofu where I've tossed it in egg/milk mixture and then coated it in panko crumbs before pan-frying. Usually I'll just try to pan fry as is, and getting the surface to brown takes forever. Breading first took under 5 minutes per batch, and was quite delightful. In hindsight, considering how many times I've fried tofu, it's a bit sad it's taken me this long to consider breading as a viable option! I also may next try baking tofu after breading, and see how that comes out.
I'm very much an omnivore, and really enjoy eating tofu regularly, it's just taking me awhile to figure out proper preparation for it.
