Well, not right now, but in a few minutes after hubby has finished cooking:

Omelette with sundried tomatoes (fried in the oil from the jar of the sundried tomatoes)
Steamed cauliflower (a shit ton of it)
Steamed kale (an experiment)

with el cheapo sparkling wine from Aldi. Followed by vegan sorbet (leftover from brunch on Sunday) to clear out some space in the freezer. I'm making osso bucco/vegie stew in the slow cooker on Sunday and expect to freeze 8 servings for lunches at work. We have a small freezer so planning (not my strength or hubby's) is regularly required.

Making beef broth from meat and veggie scraps I saved up in my freezer.  Crock potted the beef bones overnight, just fished them out and added veggie scraps a few minutes ago.

Bonus, there was a lunch worth of meat left on the bones!

Someone should recreate Presidential breakfasts as still life. Dan Bannino has done something similar with celebrity diets.

Grilled Colby with tofu slices on wheat prepared in cocoanut oil. This is the first time using the cocoanut; I like it. This as a butter substitute will save space in the refrigerator.

Beef with bulgur wheat and garbanzo beans.  It has tumeric, cayenne, garam masala, cumin and ginger so there is a little India-influence. 

What makes it even better:
- Tomatoes and onions were from the garden
- Garbanzo beans and carrots were from my school kitchen PT job (get a free lunch each day)
- Beef was from the 1/4 cow we get once/year
- Bulgur wheat is cheap

Making 10 servings for roughly $5 (including meat cost).  We'll eat some and freeze the rest.

Cup of tea and cranberry cinnamon oatmeal with plain yogurt on top and about 8 drops
Of vanilla stevia. Such a great replacement for brown sugar! Lots of flavoured stevia at Amazon. We use the rootbeer stevia with club soda. So good and it IS a reasonable facsimile:-)

Made a roast yesterday.  Cooked in the crockpot in apple juice, vinegar, cayenne pepper, and ketchup on top.

Served with rice cooked in the homemade broth I made a few weeks ago from scraps and froze, and steamed broccoli.

Today or tomorrow I'll shred up the roast and stir fry it with red peppers and yellow squash and serve it in wraps. 

Then if there's still some left (there should be) it will be for sandwiches or whatever.  It was a huge roast!

I ate a variation on the Budget Byte's chicken taco bowl recipe.  No corn, so I used 3 cans of diced tomatoes.  I also had some chocolate pudding (made from an instant chocolate pudding mix we had in the pantry).

Rye bread slathered with honey mustard.  On top of which is a pile of Montreal smoked meat.  On top of which is a pile of old cheddar cheese.  Placed in grill until melted.  On top of which is a pile of homemade sauerkraut.  On top of which another piece of rye bread slathered in hot horseradish.

Accompanying this are hand cut sweet potato fries seasoned with cayenne/paprika/salt/pepper/garlic salt/olive oil and oven baked.  Dipped in a ketchup/sriracha sauce.

Additionally accompanied by an arugula salad with pumpkin seeds, dried cranberries and a raspberry/pomegranate vinaigrette. 

Oh, and a homebrewed pale ale or three (serial rather than parallel)....  :-)

Koeze's Cream-Nut natural peanut butter and Marmite on whole wheat sourdough bread. I keep the peanut butter and marmite in my desk drawer for days when I have no dinner leftovers to bring, so then I only need to bring bread or crackers to eat lunch.

I made eggplant "meat"balls. I received two huge eggplants from my CSA and wanted to use them before they went bad.

I think I read on some other thread something about eggplants and meatballs so I looked up some recipes and adapted them to what I had on hand.

For spices, used some frozen pesto (made with cilantro, parsley, almonds, garlic) I had in the freezer to prevent the cilantro and parsley from going bad a few weeks ago.

No breadcrumbs so used a flax seed/water mixture as a binder. I had eggs on hand, but just went with the flax. Plus, some recipes said nuts were binders too and the pesto had almonds.

The "meat"balls didn't hold up that well, but still served their purpose. Maybe an egg or two would have improved them. Live and learn.

I used some marinara sauce I had in the freezer leftover from an event I planned in which they gave me all of the extras. I froze the marinara sauce they gave me.

Boiled some pasta and had pasta and "meat"balls. Vegatarian and delicious.
