I made eggplant "meat"balls. I received two huge eggplants from my CSA and wanted to use them before they went bad.
I think I read on some other thread something about eggplants and meatballs so I looked up some recipes and adapted them to what I had on hand.
For spices, used some frozen pesto (made with cilantro, parsley, almonds, garlic) I had in the freezer to prevent the cilantro and parsley from going bad a few weeks ago.
No breadcrumbs so used a flax seed/water mixture as a binder. I had eggs on hand, but just went with the flax. Plus, some recipes said nuts were binders too and the pesto had almonds.
The "meat"balls didn't hold up that well, but still served their purpose. Maybe an egg or two would have improved them. Live and learn.
I used some marinara sauce I had in the freezer leftover from an event I planned in which they gave me all of the extras. I froze the marinara sauce they gave me.
Boiled some pasta and had pasta and "meat"balls. Vegatarian and delicious.
