Fresh caught rainbow trout stuffed with thyme and lemon, with buckwheat and mixed veggies... and thai tea mochi for dessert. :)

I had chicken paprikash for dinner. I didn't love it but for a weeknight meal it turned out ok.

I just cook my buckwheat like it's rice, usually.  Sometimes in chicken stock, sometimes with powdered garlic and onion, sometimes plain...  It's been a while since you asked, but I'm betting I did that particular batch with garlic and onion, and then squeezed some lemon over it.

I just had 1 cup of egg whites and 2 whole eggs with no sugar added Heinz ketchup. Also had one whole Ezekiel muffin (which is two servings). Water to drink.

I'm on a diet now, I had stomach problems, so I have a special diet that makes me sick, and from which I also lost weight.

A sort of General Tsos- spiced fried rice deal with lots more veggies than chicken. My go-to stir fry recipe. Oh, and spring rolls from the freezer section at Dollar Tree because 1) they're good and 2) you can't beat 10/$1.

I made this up and must share.

Zesty Southwest Black Bean Quiche.

Crust is pretty much pie crust, but 1/3 of the flour is replaced with cornmeal.

Filling is 8 eggs, half of cup almond milk, a can of black beans, a can of rotel, Mexican spices (chili powder, cumin, oregano, cayenne, paprika, onion powder, garlic powder, red pepper flakes, pepper, salt), bell peppers diced small, other veggies if you want, maybe corn would be good.

Can be topped with shrimp, sausage, or bacon.
I suppose you can add cheese, I did not as I'm allergic.

**above recipe is enough for 2 pies or 1 9x13 inch pan

OMG so good!  I've made it twice, it was definitely not a fluke.  First time was to a work function, I was sad that it all got eaten and I had no leftovers.

Small store near where I work, they heat up sandwiches for lunch. Around 1:30 they get discounted 75% off. Not the tastiest lunch, but all part of the plan!

Nothing right now, but I'm making brisket with caramelized onions for later.  Made this once before, and it was amazing!  Even DH admitted that the onions were somewhat okay, though I did get most of them :-)

About to sit down to a roasted red pepper flatbread. Don't have tomato sauce, used pesto on pasta yesterday. So I stuck a couple of sweet peppers under the broiler then whizzed them up with some cashews, salt and pepper, garlic, and lemon juice to make a sauce. Topped a pita with it and artichoke hearts, black olives, roasted chickpeas, and a couple dollops of ricotta. Stuck it back under the broiler for a couple minutes. Seems like a decadent dinner when in reality, it's my answer to being too lazy to do any real cooking.

Humboldt Fog cheese ($17.99/lb at Costco, $8/lb cheaper than I've ever seen it for sale before), crackers, and green olives. It's been a tough couple of weeks, and this is a delightful treat.

Vegetarian pumpkin chili with green chili cheddar sprinkled on top. You don't taste the pumpkin, but oh my, the texture is amazing!

I thought I'd reboot this thread for an interesting idea DH came up with (spontaneously but it looks like plenty of other people have had it.)  When you make scrambled eggs, pour the egg into bell pepper rings.   

You need to press the bell pepper ring down initially to make sure it doesn't escape, but it seals itself pretty quickly.  Added bonus is to do it over melted cheese so the bottom is singed cheese instead of singed egg.  You do have to cook it slower than regular scrambled eggs, but it's worth it.  It helps to put the lid over the pan so it heats from the top, too. 

The bell pepper egg can be put on a bun for a good sandwich, too.

+1 for this delicious trick!

You can also do this in one of the larger outer rings of an onion. It is an awesome topper for a veggie burger or used alone in an egg sandwich!
