Two slices of provolone in a pita bread pocket.  I am on the road for work, and walked to Whole Foods last night instead of going out to dinner.  Made money, since I get a per diem, and had enough left over to breakfast (and probably lunch as well).

I love going out to the supermarket instead of restaurants in strange cities! The variety and novelty is just awesome. What's standard in one store might be scarce back home and vice versa. Supermarkets are like novels, telling you what the inhabitants of the town find important.

Beer Bread!

3 cups flour
3 teaspoons baking powder
1/4 cup sugar
1 can beer

Preheat oven to 375. Mix together the ingredients above, stick in a lightly greased bread pan. Melt 1/2 cup of butter over the stuff in the pan. Bake for 45 min - 1 hr.


Comes out crunchy, buttery, and fricking awesome! (Works well with just about any darker-than-lager beer.)









Yes it's full of *gasp* glutens, and *shock/terror* carbs.  That's what makes it awesome.

Mixture of oatmeal with Bob's Red Mill Gluten Free hot cereal, soy milk, water, black strap molasses, cinnamon, cardamom (most wonderful spice in the world), and nutritional yeast flakes.

- all marked down at the supermarket
- much cheaper than buying a cafe/restaurant lunch

Nothing yet but I am going to go make a sandwich. Earlier I made my guys, pork chops, potatoes and squash. I couldn't stand to look at that pork. A cousin had me watch a video the other day about pig treatment a Tyson facility.

I think today's school lunch was worth writing about (to make you JEALOUS bwahaha):

--kimchi (duh)
--cooked greens with some stuff. Who knows?! Delicous.
--potato carrot onion side dish that's all cut into sticks and smushy and delicious and covered in pepper. Who knows?! Delicious.
--CHICKEN MAYO! <3 <3 <3 (rice, chicken, scrambled egg cut into strips, roasted seaweed cut into strips, and MAYO!)
--some soup that had fish or chicken in it. Who knows?! It was okay.

I also got two little snack pouches of nuts with dried blueberries, which I'll eat as a snack at home later since I'm so full of other things right now.

Preheat oven to 400F. Mix black bean, corn and shredded cheese.

Edit: If you value easy cleanup, line your baker with parchment paper or aluminum foil before starting.

Line bottom of baker with about 1/3 cup salsa. Add tortilla. Spread in 1/3 of bean mixture. Add salsa and another tortilla - repeat. End with salsa and shredded cheese.

Bake 30 minutes. Remove and let sit 10-15 minutes. Slice like a pizza.

(Make sure whatever baker you use has high enough sides!)

I was lazy this morning and didn't get up in time to actually prepare a decent breakfast, so I just had coffee and yogurt :(  Now I'm about to snack on some mandarins.

I've noticed that I haven't been buying much processed food lately. It's great, but requires more planning and time.

Pretty cheap dinner:  chick peas (bought them dry and then soaked and cooked them), and sweet potatoes, with pepper and Bragg's Liquid Aminos.  Had the same for lunch.  Yum!!

penne with broccoli and veg. sausage

:) I'm smiling to myself at my desk because my entire lunch cost about $2

Black bean and tomato quinoa with a lime dressing. I hadn't had much luck with liking quinoa until this recipe, which made on Sunday to eat for lunch all week. So delicious!
