I had kimchi, dubu kimchi (tofu, pork, and kimchi stir-fried), miyeok guk (seaweed soup), rice with red beans, and a stellar fruit salad that contained banana, kiwi, orange, apple, and ggul tteok (honey-filled rice cakes)--topped with strawberry dressing.

Hey... I'll always take Konglishy words of encouragement. The good thing about "fighting!" is it's never a bad idea. Studying for an exam? Fighting! Wedding? Fighting! Saved money last night by talking boyfriend out of pizza and into frozen donkassu (true)? Fighting! Funeral? Fighting! (erm... maybe.)

Anyway, since I'm here: breakfast! coffee and a bagel/egg/cheese sandwich, lovingly made by my sleepyhead boyfriend--not McDonald's.

I got braces on Monday, so I'm on an all liquid diet until I figure shit out (namely, how to stop hurting).

Breakfast was a smoothie (frozen fruit, banana, cashew butter, rice protein powder, and orange juice). Lunch was my favorite soup ever (roasted carrot and potato), which just happens to be super cheap and easy to make. It's delicious, and made me feel less sorry for myself for my asshole braces.

Lunch will be leftover homemade cilantro soup and I will also be gnawing on my latest attempt at baking gluten free bread.  :/  Also, homegrown cucumber chunks.

A Yogurt Parfait (brought from home in a mason jar of course) with chopped strawberries and homemade granola. Lunch will be (also brought from home) rice with curried carrots and chickpeas. Yum!

Homemade "instant" granola packet with some chopped crystallized ginger and dried pear, was an experiment turns out to be a very good flavor combo.

Roasted Cauliflower and cheese soup on the menu for tonight. Possibly homemade crackers if I get ambitious.

 I really love this website, but find her estimate for the cost of food significantly higher than I spend.  Could be because I buy in bulk and on sale, but my food never costs as much as she lists.   $2.78 for pasta?  Try $0.75.  $6.09 for 1.5lbs of burger?  Try $2.50.  $2.50 for shredded cheese?  Maybe $1.50. So much of her food is delicious and cheap if you are a frugal purchaser of food:)

Spicy red sauce with spicy italian sausage and italian peppers on thin spaghetti and cream sauce with unspicy italian sausage on thin spaghetti. Not bad for a twenty minute weeknight meal.

it's the simple, meatless day in-between the more involved Monday (Tuesday leftovers) and  Thursday (Friday leftovers) meals.

tonight I made two pots of soup. one was corn chowder using canned corn and left over mashed potatoes. the other was beef barley using leftover roast beef, plus a lot of veggies in the crisper. I remembered I had a bunch of beets so I roasted those with some potatoes and onions for hash for breakfast this week. I used up a jar of leftover red sauce as dip with some goat cheese and pita bread. good eats tonight!

New York Strip Steak, medium rare, with butter on top (of course), Cook's Illustrated to-die-for glazed carrots, roasted redskins with rosemary and plenty o'butter, and a piece of grilled seeded rye to mop up the liquid with. Plus new and improved (nicer than my breakfast's coffee) Costco Guatemalan coffee.

(Cooked homemade enchilada sauce for 1st time yesterday. Easy enough to make, although I was startled that it's roux based. Who knew?)

Dinner tonight, clockwise from entree: scallop and new york strip steak, rare (yes, with butter, don't knock it till you try it), cook's illustrated to-die-for glazed carrots plus gratuitous crushed red pepper, creamed kale, rosemary oven-roasted potato wedges, curry oven-roasted sweet-potato disks.

Not pictured: homemade pinot noir.

I just ate sauteed king oyster mushrooms and cherry tomatoes, which I cooked in a little cooking oil and sprinkled salt and pepper on. That's it--pretty simple.

But I'm still hungry, so I might make more mushrooms. I ate all the cherry tomatoes :(

Or maybe I'll fry up some potatoes and add eggs and salsa to make some sort of scramble thingy. That option sounds more filling!

Had an amazing burrito for lunch today. Made me wish I didn't care about FI so I could buy my lunch every day. Then I came back to work, checked my bank balance and remembered why I don't do that.

But back on topic: the burrito had rice, black beans, sauteed veges and guacamole. Oh, and hot salsa. So good. I'll have to try to recreate it at home.

Two-egg omelet with 3 oz. of Welsh cheddar cheese, seasoned with salt, a little black pepper, and lots of cayenne pepper. One big slice toast made with good bread and salted real butter on it. Had caffeinated French vanilla coffee three hours ago when I got up at 6:15 am and meditated. (For me, that's saying the rosary.) Then went around corner to get granddaughter on school bus and pick up 2 toddler grandsons to drive to preschool, before doing a half-hour morning chore routine for my working dtr. and s-i-l. Just had 4 oz. of tomato juice with lashings of Worcestershire sauce before eating omelet. One-half cup of hot whole milk, just because I'm cold. (Can't keep house any lower than 67 F, or I start shivering despite wool clothing.) Now I'm going out for my 40 minutes everyday walk in the woods.

I splurged on some fast food.  On the rare occasions I get fast food I normally stick to the $1 menu, but today I spent $5 for a potato burrito and a combo burrito at Taco Bell.  Celebrated the last "must have" part of my motorcycle ($2.47 battery strap, to replace the twine tiedown that I was using and is at risk of coming loose) arriving.

Homemade tortilla chips (tortillas sliced, coated in a thin film of oil and baked at 350 F for 25 min) + (homemade refried pinto beans + 2T homemade taco spice mix  + minced jalapeno + diced red and green bell peppers + shredded cheese + sliced black olives).

It's more like what am I NOT eating.  That's right - I scored a victory tonight!

I have enjoyed convenience store food for a bit, not because it's tasty; mostly because it's there. It's a habit.

So to shrink my waistline and expand my wallet, I stopped even going in. I pay at the pump and don't even go in when the pump is out of receipt paper. My temptations are behind the glass, inside.

Tonight, someone asked me to retrieve some goodies for him while he was still on the phone in the car. He didn't know what he was asking me to do.

It was like running the gauntlet. Yes, those horrible, starchy, fatty, mystery foods beckoned to me. I used to love them (and I still do, if I'm honest).

But I would wait for satisfaction. My well-made burrito was waiting for me at home. I would be faithful.

So here I am: satisfied and yet a few pounds lighter, a few dollars heavier, a little stronger... until the next time.

mock salsa (pasta sauce, chili powder, beans, and corn)
cheddar cheese
chicken
lasagna noodles
ricotta cheese + egg
pickled jalapeno rings
Mornay sauce w/ cayenne pepper and diced tomato (bougie queso dip)
