Life got hectic the last couple of weeks so mostly my wife cooked. Made a very nice cottage pie last night.

Chicken stuffed with mozzarella basil and roasted peppers baked in breadcrumbs, and arancini with mozzarella (basically arborio rice in breadcrumbs fried).

Tuna "sushi" (just tuna salad on seaweed, no rice, with wasabi and sriracha, dipped in tamari). It's too hot to cook anything today! I don't want to risk warming the place up.

Warm banana bread I just pulled out of the oven. I have been tweaking with the recipe to make it more and more healthy (less and less unhealthy?). Replaced white flour with whole wheat, reduced the sugar by over half, added almond meal this time. Yum!!

I did not have any paper bags, or I would have tried that method.

Popping without oil is done exactly the same way as WITH oil... just without oil. Took longer, but it worked in the end.

We are running low on food but I managed to make a delicious meal, steamed rice, broccoli, carrots, baked vegan meat and a bit of the end of a jar of hot salsa on top. Unconventional for breakfast time.:)

I used to know someone who used to do that with a raw onion!:P

Aww yeah, the beautiful main crop tomatoes are coming in!  I just polished off a sammie with two homegrown eggs, a couple basil and lettuce leaves, red onion, avocado and bacon crowned with a gorgeous slice of golden beefsteak tomato and some homemade honey mustard all nestled in a jalapeno-cheddar roll.

The tomato was from our garden. Not a great year for tomatoes, they are delayed and not yielding much so far. It has been, on average, cooler and wetter thus year. I think ypthey would like a few hotter days. We are finally getting some fruit, now it has to ripen! Usually we get lots of tomatoes, and almost zero cucumbers. Oh well.....

How were the eggs cooked? Runny yolk??

I'm cutting back on the refined carbs, so some brown rice microwaved with some smoked chopped bacon leftover from making carbonara the other night, topped with some chopped New Zealand grass fed cheddar. Served with a side of lettuce seasoned with salt and pepper.

Quite tasty, though it wasn't appealing to me before I made it, but I'm at work so options are limited.

Not eating it yet - just put in the oven a lemon-lime cake with blueberries and an almond flour streusel topping. Sounds great in theory - we'll see how it turns out!

I started with a Lemon cake mix I got on sale at the store, then made up the rest.

We're in a short-term managed apartment's kitchen at the moment with no real supplies. We had chicken breast/potato/rice burrito bowls two nights ago and tonight we'll have chicken breast/potato/rice but in a vaguely mediterranean way. God damn I'm ready to have my own kitchen again.
