With my schedule of late I have been going with simple so yesterday we had pork chops, scalloped potato's and ham and green bean. With all 4 kids in the house for the summer and the amount I have to cook its just easier to go simple with the limited time I have in the day.

Last night I decided to splurge and got fresh salmon from the grocery store - got lucky and it was on sale cheaper than the frozen we usually get :)  Baked with butter, garlic, and thyme and served with rice and steamed broccoli.

Tonight will be homemade pizza.  Dough is in the fridge thawing.

We're going out to dinner tonight, but I'll make dinner for the week. I'm making chicken/bacon salad stuffed avocados, and chicken taco soup for the week. My husband is making steak tomorrow for Mother's Day

Cheeseburgers on keto buns with sauteed mushrooms and onions.  Roasted asparagus on the side.

Tomorrow I'm planning to smoke a chicken and we'll have a spinach and blue cheese salad, and steamed artichokes with homemade aioli.

This morning's late breakfast was filling  so dinner will be lighter fare.

I'm cooking tonight's  lentil soup right now.

With it we'll have buttered French bread.

 Tonight's dessert is peach pie.

The team made me blintzes for breakfast.

Then we did some things, including a bike ride.
We moved dinner to late lunch, as one of my kids is working 4-9 this evening, so we had nicoise-ish salad for a late lunch (with salmon, potatoes, green beans, capers, olives, and hard boiled eggs, and a parsley vinaigrette) and we'll have ... I dunno, something for dinner. Possibly pizza -- the working kid works in a pizza place and gets 50% off. It'll still be an expensive pizza, so we'll see,

I picked 3 bags full of sea kale (Crambe maritima). And a lot of some other plant, Hylotelephium maximum (related to witch's moneybags). I am home alone tonight and will eat some of it. And prepare the rest for storage.

Made a "kitchen sink" risotto. 

I've been reading a thread on here about cleaning out the fridge so I decided risotto would be perfect.  Everyone was pleased with it, but I was more pleased I could clean out a few items.

It’s husband’s day off, so he marinated a pork shoulder overnight and put it in the smoker this morning. I’ll make a simple potato salad and sautéed zucchini and tomatoes to go with it.

Home alone tonight.
I warmed up a freezer portion of chicken with mango and cashew nuts. Made some nuddles with it. And I fried some selfpicked plant parts together with some dried selfpicked mushrooms.

Tonight I am going to kind of wing it. I have 4 zucchini's for which I will spiralize. In a skillet I will add butter and a heavy hand of minced garlic. To that, I will add the zuke and cherry tomatoes and finish it off with parmesan cheese. Should be yummy! I receive organic veggies from Misfits Market and I get a box full of surprises every other week. I also have a ton of carrots for which I will make a carrot ginger soup.

Last night was couscous salad which turned out to be really tasty! I think someone recommended it over on the salad thread.

Last night I toasted some hamburger buns that I had in the freezer and a couple of hamburgers.  Invited 2 friends over and made some tater tots in the air fryer.  I have used the air fryer so much that the handle had to be super glued back in place.

One thing that I like as a single guy is frozen food.  I hate watching food spoil.  Plus the buns were from an event at work that I ended up freezing.

Had a leftover whole chicken with not a lot of meat left on it, plus expired-but-fine sour cream, and a bunch of broccoli.  Weather turned rainy and cooler today, so cream of chicken/broccoli soup with some mushrooms, homegrown green chile and homemade stock.  Yum, we ate all of it.

It has been a while but I am making black-eye peas tonight maybe with hog jowl (or bacon).  I soaked them overnight and when I get home will plan how I will season them.

DH made veggie burgers and I had to cook them. I managed to burn them on one side, so I had to cut of about 1/3 of one side. They tasted okay. I served salad with it (lettuce with a few leaves of selfpicked plant, tomato and olives). And potatochips panfried.

And I baked an apple pie from leftover apples from work.

We have to be at a school thing 7-9, so I'm making... well, I want panzanella, but everyone else would prefer warm pasta. So I'm probably roasting cauliflower and asparagus, and mixing in mozzarella balls and roasted (jarred) red peppers, maybe some slightly marinated red onions and thinly sliced celery.

Then I'm mixing mine with toasted bread cubes, and everyone else's with (pasta) shells. I get vinaigrette on mine. They get olive oil, I guess. Maybe some pesto from the freezer.

So, I rarely make anything anymore, 'cuz I"m the one who gets home late.

But yesterday (well yeah, I got home late) - I gathered up bits and pieces of things:
frozen cooked lentils
frozen diced canned tomatoes

and some bits of veg in the fridge that I chopped and put into a container:
onion
green garlic
carrots
celery (frozen)
zucchini
chives
cilantro

I wrote a "recipe" (ahem, it was a purple sticky note) and left it for my husband.  I was going to mix up spices but found I had leftover Berbere spices in a container. 

It was a delicious soup.
Leftovers tonight!

I ate it with homemade gluten free bread made with cheddar, chives, and buttermilk.

I need to also cook up the artichokes tonight.  Hubs doesn't like them so he doesn't cook them when they come in our CSA.

I just looked in the fridge and spotted
-leftover pulled pork from Tuesday
-leftover potato salad from Tuesday
-leftover chicken from last night
-leftover rice from yesterday
-leftover Thai noodles from yesterday's lunch
-a container of salad mix that needs to be eaten in the next couple of days
-bread, deli meats, and various accoutrements for sandwiches

I'm exhausted today from allergies + meds, so the prospect of a no-cook random leftover meal is wonderful. Mmm, potato salad.

Tonight we had a huge bowl of chicken soup w/saltines.

It was so thick that  maybe it was chicken stew.

Of course it was homemade.

We're having grilled pork chops, roasted brussels sprouts, maybe salad (we have a bunch of salad veg that need to be used) and stuck-pot rice with lentils (thanks @OtherJen !)

Careful, @jeninco , you might become slightly obsessed with the stuck-pot rice and make it so many times that your spouse (who loves rice) starts rolling his eyes. Ask me how I know.

Also, I found it helpful to boil everything for a few minutes longer than recommended. Definitely wrap the underside of the pot lid with a tea towel, and add a little extra oil to the pot after you remove the onions.

I read about the risk of botulism. Are you aware of that? If can appear in food that you ferment yourself at home, especially if it stands at warmer than refridgerating temperatures. If you before eating it warm the food for 10 minutes at cooking temperatures (100C), your food should be safe to eat.

My understanding is that foodborn pathogens aren't an issue if the fermented food is adequately acidified.  Referring to Sandor Katz's encyclopedic book The Art of Fermentation, botulism is associated with ferments that are subsequently canned, and also with garlic preserved in oil, and potentially with meats.  I have been fermenting for several years now, and just store in the fridge once the fermentation process is complete, and keep everything submerged in brine, which controls for mold development.  Heating before eating would kill the beneficial probiotics, so I usually avoid that.

We're having leftovers. We had guests this weekend, & I was running a half marathon out of town + my husband was traveling. So, Uber eats. We'll eat the leftovers for at least two meals. Still not frugal, but sometimes things get away from you.

Tonight will be honey mustard chicken and vegetables and stuff, but I'm taking advantage of the oven already being on to make a very knock off version of char siu in advance of making Singapore noodles later this week in my attempt at trying new recipes. Hopefully it turns out good.

The kid who is having his last day of school today has requested shrimp baja salad. In spite of the fact that it is now 50 degrees F and looks like it'll resume raining at any moment.

Perhaps we'll make a dessert to go with it, and to have something warm.
