Having guests, so:
Appetizers: lovely fresh artesian bread ($$$, but delicious) with homemade liver pate, fresh tomato salad, maybe cheese
Potato salad (I made a batch of aioli this afternoon with this in mind), steamed green beans, grilled pork tenderloin
Pistachio pound cake (it's supposed to have a lemon glaze, but one of the guests is citrus-allergic, so we'll serve it with plum compote I canned a few years ago and perhaps fresh blackberries, if we have any ripe ones on the bush)

Also feeding people tomorrow, but I have absolutely no idea! perhaps tortellini salad...

We have VEGGIES!

So we're doing a mezze platter with three dips: beet/tahini dip, cashew dip, typical onion/may dip and sliced carrots. Then celery, blanched beans, crackers potatoes and hard boiled eggs to dip!

We made a tamarind shrimp dish with curry leaves that we haven't made in a long time.  It's nice and tart and I love the nuttiness of curry leaves.  And corn on the cob.  Never can get enough of that in summer.

Tonight is "tamale-inspired" waffles with black bean hash.  Basically waffles made from masa harina and cornmeal, topped with a mixture of onion, bell pepper, black beans, corn, and taco seasoning.

For real, it's amazing. So glad my Serbian ex-work colleague introduced me to it years ago.

Regulars usages in our household
- as a pasta sauce!
- mix into greek yogurt as a dipping sauce!
- with hummus on pita breads!
- on seedy-bread topped with thinly sliced cheese and a fried egg!
- smeared on boiled eggs
- a very flavourful pizza sauce

It's late summer farmer's market season 'round here...

Last night: tacos: homemade tomatillo sauce, shredded last bits of leftover beef, a patty pan squash, sautéed with a roasted poblano, a few cut up tomatoes, some shredded red cabbage with a little vinegar, black bean and (fresh! sweet!) corn with chipotle vinaigrette.

Tonight: it finally cooled off, so I'm not sure. I have potatoes, green beans (that I steamed last night) and a bunch of ripe tomatoes and cakes to use up this evening, so probably a greek salad with ... something? (Hmm, or some variation on a Niçoise salad, possibly with canned tuna.)

Corned beef sandwiches. Cooked a corned beef in the crockpot and will slice it up, put on a grinder roll with some sauerkraut, melted swiss cheese and mustard.

@jeninco - thanks for the reminder to pick my tomatillos & make a batch of salsa verde. Your dinner sounds delicious.

It's been another really crazy week at my house, so we're doing the high quality option of .... leftovers. Adults will have grilled chicken salads. Kids will have pizza leftover from a giant teen swim party.

Last night: Mark Bitman's "this ain't really Cassoulet", with beans, some random sausage, and a ton of vegetables. Topped with homemade sauerkraut.
Tonight: Quick beef stew with onions, potatoes, carrots, and green beans. Thank heavens for the pressure cooker: got the beef cubes cooked in record time! Side of a perfectly ripe tomato salad, and some fresh, sweet corn.

I deliberately overbought corn, cut the remainder off the cob, and some time later this week we'll have a salad of black beans, corn, little bits of red pepper, and avocado cubes in a chipotle vinaigrette.

Also later this week: eggplant rollatini, courtesy of the smitten kitchen. I roasted several eggplants cut into slabs yesterday, (along with a shit-ton of yellow and red peppers, which are already residing in the fridge in a yummy vinaigrette.)

I just learned how to cook rice in my slow cooker! It is a no brainer but I have never done it before. I used my smaller slow cooker. It is probably 3 quarts. I used a crockpot liner. It said to rub the sides of crockpot with butter so I did my best to put some butter on the CP liner. Then I added 4 cups of hot water and 2 cups jasmine rice. To that, I threw in a little salt and a couple tablespoons of butter. The recipe said to cook 1 1/2 to 2 1/2 hours on high. It also said to stir a couple of times. After about 45 minutes I stirred it. At 1 1/2 hours, the rice was cooked perfectly. It was fluffy and not sicky. What is also great is that I could pull the entire batch of rice out in the liner and put in a storage container to put in fridge. The CP was clean so no pot to wash.

Today is going rapidly sideways, but I had time this afternoon to pre-trim a bunch of green beans, make some tomato sauce, and make 3/4 lb of beef into meatballs that are currently residing in the (on the stove, but turned off) tomato sauce. When my work call ends around 6:15, I'll turn the pot back on, turn on the pot with the pasta water, and we'll have dinner in the time it takes to boil water + cook pasta (I'll throw the green beans in the boiling water at some point, too).

I made the baby potato, shallot, bacon, arugula “idiot proof” dinner a forumite gave me. It was just the ticket for a dinner that was easy to prep ahead and looked fancy when served.

425 degrees

1 bag baby potatoes tri variety or red
1 bag shallots
1/2 lb bacon sliced in 1” pieces
1t. Salt
1t. Pepper
Mix together and put on lined baking sheet

Bake 15 minutes-toss hot ingredients to coat.

Mix 5 oz arugula and 1T lemon juice (or vinegar) in a large bowl. Put back in fridge.

Bake additional 30 minutes-check doneness. If not fully cooked, toss again and bake 10 more minutes.

When fully cooked, stir into the arugula bowl and serve immediately.

Yummy!

@mspym that sounds nice apart from the mushrooms.

I'm going to try this lemony baked rice thingo but will serve it with hot smoked wild salmon or smoked mackerel.
https://www.delicious.com.au/recipes/spanish-style-salmon-lemon-roasted-rice/7mdy7g46?current_section=recipes

I am using a fresh lemon but I'm leaving out the sumac because I don't have any, so hopefully it's not too lemony. And I'm using cashews instead of almonds because that's what's in the pantry, and I'm not chopping them.

I wasn't a massive fan of the crunchy baked rice I tried above ^ so tonight I'm reworking it. I'm baking a tray of various veg* with olive oil, smoked paprika, coriander seeds, mint, half a lemon (diced), salt & pepper and a sliced long red chilli.  I'm also roasting a couple of chicken drumsticks on top. When that is done I'll put the drumsticks to one side & stir half a cup of brown rice & fresh parsley through the veg and then serve with a drumstick.

*Parsnip, butternut squash, zucchini, broccoli

It’s Crocktober! On the 1st I made corn chowder. Today is Turkey sloppy Joe’s and a chopped salad. The think I like about crocktober is your dinner is pretty much done in the morning, so take out is less of a temptation. I’m freezing 1/2 the crock meals, so I can eat them again in November without really cooking. (Passionate penny pincher recipes this month.)

I'm away from home, helping my aunt through surgery (which is tomorrow).
Today: A soft of pasta fazool-ish thing: sauce an italian sausage and some onions, then add tomato sauce and some dried white beans, later toss in some small pasta and some greens.

Tomorrow: fuck if I know, I'll be at the hospital all day helping out/providing company, and I'll be headed back early. Probably leftovers.

Wed: hopefully she comes home! Per her request, chipped beef with gravy on baked potatoes. Per my inclination, roasted Brussels sprouts on the side. You get me, you get one or more vegetables with every meal: it's part of the deal.

Thurs: likely smoked pork with cabbage and potatoes, probably all cooked in one giant cast-iron pan.

Friday: Not sure, but it'll include asparagus. I noted some polenta in the kitchen, so things could go in that direction. We'll have some leftover beef that'll need using, so these things could all be combined nicely...
