Creamy Carrot Soup (serves 2) -- Oats are the magical ingredient in this soup. They give the soup a texture it wouldn't otherwise have and also impart a lot of creamy flavor without using actual cream. This soup also whips up in an instant.
1 lb carrots, peeled and sliced
1 small onion, diced
1/4 cup instant oats
1/2 cup non-dairy milk (such as fat-free soymilk)
1/2 tsp ground ginger
1/4 tsp allspice
salt and pepper - to taste (optional)
In a medium saucepan, combine 2 cups of water, carrots, onion and oats over high heat. Bring to a boil then reduce to medium. Continue to cook, stirring frequently, until oats are cooked and carrots are fork-tender, about 5 minutes. Transfer to a blender, in batches if necessary, and blend with non-dairy milk until smooth and creamy. Add extra water or non-dairy milk if needed. Return soup to sauce pan and add spices. Gently reheat and add salt and pepper to taste if desired.


Note:  a half a sweet bell pepper and half an apple or pear add a nice dimension to the flavor here.  and a pelled and finely chopped potato can be substituted for the oats as a thickener if you prefer.

Regional Recipe ~ Tuscan Creamy Tuscan Bean Soup

1 Pound Dried Cannellini Beans

1 Medium Onion, Peeled & Chopped

1 Stalk of Celery, Chopped

1 Carrot, Chopped

2 Cloves Garlic, Peeled & Chopped

1 Quart Chicken or Veg Broth

Sea Salt & Black Pepper

1/4 tsp liquid smoke (you can use bacon or ham if you eat meat)


Garnish:

1 Apple, Peeled And Diced

1 Small Onion, Peeled & Diced

1 Tablespoon Olive Oil

3 Tablespoons Chopped Fresh Parsley


To Serve:

Extra Virgin Olive Oil


Soak the beans overnight in a bowl of clear water. The next day, drain and place in a saucepan, and add cold water to cover by 2 inches. Bring to a boil, then reduce the heat, and simmer for 15 minutes. Let stand covered for about 20 minutes, then drain.

Return the beans to the saucepan along with the onion, celery, carrot, garlic. Pour in the stock and then add water as needed to cover the beans by 2 inches. Slowly bring to a simmer over medium-low heat. Continue to simmer uncovered, until the beans are almost tender, 20 minutes or longer, depending on the age of the beans. Add salt and pepper, to taste, and continue cooking until the beans are tender but not mushy, about 20 minutes longer. Remove from the heat and let the beans cool.

Once cooled place the bean mixture in a food processor or blender and process until very smooth. Return the soup to the pot and re-warm.

Cook the pancetta, onions, and apple in the olive oil in a frying pan until tender and lightly browned. Remove from the heat and add the parsley. Toss.

Serve the soup in individual bowls with a tablespoon or two of the garnish on top, and drizzle with a little of the olive oil.
 
Note:  I do this without oil

Note:  I like to add 1/2 a sweet bell pepper and 1/2 an apple or pear.  A potato can be substituted for the oats if you like just chop small or shred the potato so it cooks quickly.

And totally realized that the recipes Nannooskeeska posted were the fixed version. For some reason I thought they were just more. Russ, if you decide to change the initial posts, I can delete mine to avoid clutter. And I still haven't done the paleo/gluten-free thing I was talking about earlier. Maybe at some point.

A happy accident occurred when I overcooked my steamed veggies for vegetable teriyaki.  I had a number of servings of brown rice and mushy vegetables that I now needed to make over into something palatable.  Solution - Asian Vegetable Lettuce Wraps

Romaine leaves, whole, washed
green onions, washed, chopped
cilantro, washed, stems left intact
cooked brown rice
cooked steamed vegetables
teriyaki sauce, soy sauce, sriracha, sambal olek or any sauce you like - I use teriyaki and sambal olek

Combine cooked rice and cooked veggies, give veggies a rough chop if they need to be a smaller size in order to fit into your romaine lettuce leaves.  Spoon rice and veggies into romaine lettuce leaf "boats" top with green onion, cilantro and sauce of your choice.  Enjoy :)

The lettuce is cold and crispy which is the perfect foil to the hot and soft texture of the rice.  The cilantro, green onions and sauce just provide a more complex flavor profile.  A little sesame oil or toasted sesame seeds would be a great addition too.

What a great post!
I'm surprised I can't find a recipe for ramen, the quintessential cheap food!
Here's how I make my "fancy pants" ramen:

Ingredients:
1 ramen package of noodles
1/2 of the seasoning packet
1 egg
1 Tbs peanut butter
1 tsp soy sauce
sirarcha to taste
something green to put on top like cilantro or green onions - I use whatever I have in the herb garden

Instructions:
Follow the ramen noodle package instructions while leaving out half of the seasoning packet. Nobody needs that much sodium! Once the noodles are cooked, remove them from the heat and immediately mix in the peanut butter, soy sauce and whisked egg and stir it to make a delicious sauce.

here are two recipes that have become household staples.

I'm not too picky, so I can eat this for lunch 4-5 days a week.
My wife gets bored of eating the same thing, so we spice it up with some pesto or bbq sauce.

I wanted to share a meal I made the other day.  It was a huge hit.   The recipe posted here is slightly adapted from the original (link at the bottom).  This recipe freezes well for make ahead meals.

1 pound lean ground chicken
1 medium green pepper, chopped
1 medium onion, chopped
1 tomato, diced
3 garlic cloves, minced
1-2 cans (15 oz) black or pinto beans, rinsed and drained
1 can enchilada sauce
1 teaspoon each onion powder, garlic powder, salt, black pepper, and ground cumin
12 corn tortillas (6 inches)
2 cups (8 oz) shredded


In saucepan cook chicken, green pepper, tomato, and onion over medium heat until meat is no longer pink.

1.  Add garlic; cook 1 minute longer. Drain. Stir in beans, enchilada sauce, tomatoes, onion powder, black pepper, garlic powder and cumin. Bring to a boil. Reduce heat; simmer, uncovered, 10 minutes.

At this point you can serve this meat/vegetable mix over rice and call it done.  You can also continue on to make it a casserole. 

2.  Preheat oven to 350°. Spread 1 cup meat sauce into a 13x9-in. baking dish coated with cooking spray. Top with six tortillas. Spread with half the remaining meat sauce; sprinkle with 1 cup cheese. Layer with remaining tortillas and meat sauce.

3. Cover and bake 20 minutes. Uncover; sprinkle with remaining cheese. Bake 5-10 minutes longer or until bubbly and cheese is melted. Yield: 10 servings.

I just had to share this recipe.  I had some pantry items and made this up - it's pretty similar to many other lasagna recipes.  It was creamy, rich, meaty and thick!

Here's the gist of it (please note all the herbs are estimates since I didn't really measure and just eyeballed it - I tried my best to guess w/ the ratio's I used):
Ingredients
Meat Sauce:
1 lb 80/20 ground beef
1/2 an Italian sausage (this was leftover from Italian sausage & peppers I made the previous day)
1 can (14-16 oz, I can't remember exactly) of zesty pizza sauce - I got this on sale at Hy-Vee some time ago
4 cloves garlic
1 tsp dried onion flakes
1 tsp dried fennel seed
1 tbsp dried oregano
1/2 tbsp dried basil
1 tsp dried parsley
1/4 cup Moscato (had some cheap Yellow Tail)
Kosher salt
Black Pepper

Cheese Sauce:
1 8-oz package cream cheese (softened - I microwaved it for a minute and a half)
4-oz sharp cheddar - grated (half a block from Hy-Vee)
4-oz pepperjack - grated (half a block)
2 eggs
Kosher Salt
Black Pepper
1 tsp dry parsley

Other:
6 lasagna noodles
1 8x8 pan
1/2 cup bread crumbs

Steps:
1. Brown ground beef in a large skillet at medium-high
2. Add garlic, dried onion, all herbs, salt, pepper to the browning meat
3. Add chopped up Italian sausage to the skillet
4. Stir in can of pizza sauce, also re-fill the can with water and add that as well - make sure to scrape off as much sauce as possible out of the can.  Let sauce come to a boil and let it cook down for a few minutes.
5. Lower heat to medium low and stir in the Moscato.  Let simmer/ slight boil while you prepare the noodles.  Now's a good time to pre-heat the oven to 350.
6. Boil a pot of slightly salted water (I also add a little olive oil) and prepare noodles according to directions.  I broke mine into slightly smaller pieces since I was using an 8x8 pan.
7. While the noodles are cooking, prepare the cheese sauce.  Mix well all cheese ingredients together.
8. Once noodles are done, you can start compiling everything in the 8x8, first a thin layer of meat sauce in the bottom.
9. Then, noodles followed by meat sauce and topped with cheese sauce.
10. Do step 9 until you're out of ingredients.
11. Top with more shredded cheese and bread crumbs.
12. Lightly tent the top with foil, also make sure there's something underneath to catch any potential drips/boil overs.  Cook in the oven for 35-45 minutes.
13. Remove cover and cook for another 10-15 minutes

The Moscato, cream cheese, and bread crumbs make this different than other lasagnas I've made.  They definitely added more depth to this already rich food.  Of course you can experiment with different types of cheese; I just used what I had.  Also, any tomato sauce can be used instead of the pizza sauce & water.

I was surprised not to see Mr Money Mustache's own recipes listed here. They can be found on this page:

Here is my variation of his "Fish Molee" recipe. It's a simple, healthy, nutritious and delicious fish curry. Basically you just keep adding things to the pan:

Take 250g white fish (haddock is good). Rub on 1/2 tsp turmeric and 1 tsp salt.

Put 2 tbsp coconut oil or olive oil in a pan and start sizzling it. Dice in 1 onion. Grate in 3 garlic cloves. Grate in 1 tsp ginger. Slice in 1 big yellow pepper. Stir in 1 tbsp curry powder. Slice in 1 big red pepper. Cook for two more minutes.

Add 1 tin coconut milk and simmer for five minutes. Add the seasoned fish. Make sure it's under the liquid, and finish it up for 6 to 8 minutes depending on the thickness of the fish.
