Mustachian Recipe Index
« on: August 25, 2013, 10:38:43 AM »
Hey everybody,

Since it seems every month we get a new recipe thread, and then soon after a few requests to make a Food and Recipes topic, I thought I'd try to address that by starting a big ol' recipes sticky. The intent of this thread is to catalogue every recipe posted on these forums in one easy-to-find location. Please feel free to continue posting food- and recipe-related questions wherever you see fit on the forums; I recognize this may or may not end up being a popular thread for question-asking. If, however, you'd simply like to share something tasty (or not) that you've made, I'd really appreciate you sharing your recipe in this thread, below, so I can find and add them to the index easier. Discussion of recipes and food in general is also welcome.

Thanks, and enjoy!

-Russ

Enjoy!

Hi Russ,

Thanks again for all the hard work you put into maintaining this index, I use it all the time! Just thought I'd mention the "Christmas Morning Breakfast Strudels" probably should b filed under "Breakfast" instead of sweet breads - they are all sorts of eggy, cheesy goodness :)

If that sounds good to you, since you are the friggin' boss of this thread, I might go through and let you know which ones follow a Primal/Paleo bit, since that's what I eat, and I know it's relatively common around these parts.

Volunteering my own spreadsheet that I use for meal planning: https://docs.google.com/spreadsheet/ccc?key=0AnBFvzM1OD0NdGxFQjREMk1YNng0TUtWOU8xbkZTN1E&usp=sharing

Just moved this link into my Recipe Knowledge Base on my Google Drive, which means that I can recipe stalk you. Thanks for the share.
I'll eventually share my folder, once I get it a bit more organized. I'll just have to remember to keep naughtiness out of it. Sometimes I get mixed up with the Food Porn label. :-P

I'm still in the midst of withdrawals, so I haven't been around much either. Too busy being angry. I did have some ideas floating around, mostly with finding a small little icon for each of the categories, and making it a table instead of a list. It's a pain to manage, but looks really good.

Jamie Oliver has just launched a new series here in the UK called Jamie's money saving meals. I don't know if you can download it or not, but the recipes are all on www.channel4.com

Average price per head was about £1.50 and everything looked amazing on tv.

Not sure if I'm supposed to post an actual recipe in this thread but here ya go...

In the spirit of being mustachian, a cheap dish that is healthy and will be the best thing you have this week.
*Note: it may seem a lot of spices for this dish, but if you plan to eat indian a few times a month the spices will be pennies/meal in the end, will be well worth it*

Chick Pea Curry (Chana Masala)
Makes 4 servings

1 can Soaked Chick Peas (2c)
1 jar Diced Tomatoes (3-4c)
1 Onion, diced
1 Cinnamon Stick
3 Green Cardamom pods
1 tbs Cumin Seeds
0.5 tbs Turmeric Powder
0.5 tbs Coriander Powder
1 tsp Chili Powder (optional, but do it)
1 tbs Garam Masala powder
1 tbs Ginger, paste
3 cloves Garlic, paste
0.5 tbs Sugar
1 tbs oil (canola, butter, olive, whatever)
1/4 bunch Cilantro, chopped
Salt & pepper to taste
1/4 lemon juice (optional, but do it)

1. Heat oil in pot on medium heat. Add whole spices (cinnamon stick, cardamom, cumin seeds), swirl in hot oil for 30 seconds.
2. Add onion, cook until golden brown.
3. Add powdered spices and mix. Add ginger and garlic, cook for 1 minute.
4. Add tomatoes* and mix well. Bring to a simmer for 10 minutes.
5. Add chick peas and simmer for 10 minutes. (if too thick add remaining tomato juice or water or stock)
6. Add sugar, salt and pepper to taste. Add cilantro. Add lemon juice.

Serve as you wish (on basmati rice is popular, I can post an indian rice recipe if wanted)

The steps above are your basic steps for making many different curries
1. add oil and whole spices
2. brown onions
3. add powder spices and ginger/garlic paste
4. add tomatoes and simmer
5. add whatever the main component (beef, chicken, goat, chick pea, etc) adjust for cooking time
6. add remaining seasoning

*a word on tomatoes... I prefer canned diced tomatoes (crushed tomatoes will be fine too) In my experience, canned makes a better product over using fresh tomatoes. It's usually cheaper, it's easier and tastes better. They are picked/packed at just the right time - they have just the right water content. If you use fresh tomatoes do your guests a favour and remove the skin by blanching them first.
If you go canned obviously use the ones without other herbs/spices - just canned plain tomatoes

Mexican rice:
First, in a blender put 3 tomatoes, 2 galic cloves, half and onion, chicken broth and salt. Blend and set aside.
Heat some oil and add 2 cups of white rice(medium heat). Stir frequently, you want a golden light color.
Once the golden color is achieved (literally a few minutes) pour in blender contents. IMPORTANT NOTE: rice to liquid ratio is 1:2 so since you are making 2 cups of rice then you want 4 cups ot liquid in your pan when you thrown your blender sauce in. Also, if you dont have chicken broth eady peasy, just use water and thtow in a bullion cube.
Ok, bring everything up to a boil and as soon as it reached boil, lower to lowest heat and cover for 15-20 minutes. No need to stir anything.
Rice is done when liquid is consumed. You can also sample a small bit from the CENTER of the pan, if it is cooked but not dry enough to your liking then just turn off heat and let sit a few minutes, if you like mushier rice then add a bit more liquid next time :)
and there my friends is an AUTHENTIC mexican rice recipe. Enjoy.

Yay! So glad you like them :)

We might have gone a little bit overboard this year (first time in years all the family has been in the same place for Christmas) and my mom made a HUGE batch of filling, so between her, my sister and myself, we made 96 strudels. The bright side is now all our freezers are full and we have fancy breakfasts for quite some time :)

I just made this recipe tonight and always feel so fancy when I do. It's one of my very favorites because it is so flippin' easy to prep! For me, this will make the regular rotation especially when cooking for others. It is so savory! Hope you guys like it too.

We're having falafel tonight. GF Pita, Alton Brown's mind-blowing hummus, and falafel. Excited to see how it all turns out!

This is a great thread - looking forward to really combing through it.

Slow Cooker Refried Beans:
3 c. dry pinto beans, picked over, rinsed
9 c. water
3 t salt
2 t pepper
1/4 - 1/2 t ground cumin
1 onion, cut in half
1 jalapeno - seeded and cut into 4 or 5 pieces

Put everything in the slow cooker, cook on high for 8 hours or so (until the beans are very soft), Blend w/an immersion blender. Before blending, if the beans seem too soupy, just use a cup to ladle out some of the water. Beans will thicken after they have been in the fridge for storage.

We do this for our beans too, but just mash them with a spoon. They come out a little chunky but in a good way. So don't feel like you can't make refried beans at home if you don't have one...

Here are some decent recipes to add next time you update the list.

How much work would it be to tag recipes into a few categories so you could highlight all the recipes in the category you wanted with Ctrl+F? Something like:
Link to recipe | Slow cooker | Gluten-free

If it would be terrible it's probably not worth it. If it's not too bad, I'd be happy to do half of the posts after we agree on categories.

I would love to see a Gluten Free section and I'm sure there are some that would like a vegan section. This is a great idea, thanks for starting it.

Looks like they use mmm.com/forum/*** rather than forum.mmm.com/***. Can one of the mods do a find and replace?
