I think a pig roast is one of the better ways to eat meat, if a person is going to eat meat. It forces you to be aware of what you're actually doing, unlike a burger for example.
Awareness is exactly what we need more of in this world. As others have pointed out, we're completely cut off from our food source, as much vegetables as meat. I'm a farmer. I work very carefully to nurture my soil. That is not the way most farms, even organic farms, do it. As others have also mentioned, there is a lot of abuse of the workers at your vegetable farms. Why are you more ok with that than with eating a face? Or do you know the farmer of every vegetable you consume?
We just had a goat. It was a beautiful family event. Butchering an entire animal and knowing how to prepare all the parts (blood sausage!) takes tremendous skill, knowledge, and patience! It's delicious, but it's HARD WORK.
More people should be a part of the work that goes into the food that they consume. We've outsourced every aspect of it and it's not ok. How many calories do you expend getting the food that goes into your mouth?
A pig roast is a step in the right direction in my opinion.
Also, I have no idea, just supposing here, but are you sure it's a factory farmed pig? It seems like selling the whole animal would be a thing that a small, local farmer would do. But I've never bought a whole pig in the US so I don't know.
Ok, now for the glorification part. Hell yes we're gonna glorify it! That's what humans do! It's like if you had a Muslim roommate and you were "ok" with it, as long as they don't go around celebrating any holidays and "glorifying" it like that.
Humans are all about celebrating! And as I've mentioned, producing and preparing food is a ton of work! Please go work on a farm for a summer so you can see what I'm talking about. Any way you can turn that work into a party is a good idea. It's why humans have harvest festivals and spring festivals and summer festivals and on and on. It's like you want us to eat our meat alone in the basement, hidden from view, like a crack addict or something. We don't share your opinion that it's a bad thing, so why would we hide it? Why wouldn't we glorify it? (This is a separate issue from the fact that they showed you no respect as their roommate. I'm just sharing why we would glorify delicious food.)
That aside, what's up with your SO not consulting with you and sticking up for you? And to your actual question, Diane C's plan sounds good! Or camping!
