I'm lactose intolerant.

That being said, mozzarella is typically low lactose. If anything, it's milk in crust that kills me!

A small portion of pizza shops make delicious cheese pizza, involving oregano and some other spice that that I have never identified, but is crucial for brilliant cheese pizza!

I'm just not that big on cheese in general. And the more cheese there is, the less I'm into it.

However, flatbread with roasted veg/meat and a little olive oil and pesto and very light sprinkling of cheese is delicious.

Ha! Look at like 70-80% of bread/bun/crust from the store and milk (non-fat, often whey) is in there. My sister's homemade bread recipes use non-fat milk. Also Giant and Wegmans hoagies...

This is the ideal pizza. You may not like it, but this what peak pizza-form looks like. XD

Memes aside, Neapolitan style Margherita pizza really is my favorite, and all it has is sauce, mozzarella, and basil. And I even love the slices that don't happen to have a basil leaf on them. Thus I must conclude even cheese pizza suits me. Now, the mozzarella on the pictured pizza is quite different from what you get on an American style cheese pizza. But even American style is not something I would call a hate crime against food.

Either way I have to take a lactase pill with it or I'll be paying for it later...

A lot of the pizza we eat in Italy has little to no cheese and is infinitely tastier than the trash pizza served around North America dripping with fatty, oily cheese.

I spent several years living in southern Italy. I've had alot of good pizza since then but none of it is quite as good as honest to goodness Neapolitian pizza.

Agreed. That's a good looking pie.  The basil is a little wilted for me, and it could be a bit more generous.  But it isn't oversauced and has got some nice poof on the crust along with the leopard spots.  I'd totally smash that thing.

Ah, see I live a life of extreme privilege where I'm never having to strategize defensive ordering tactics to fend of people taking my pizza. Lol.

But yeah, what I like on my pizza depends on the type of pizza, the type of crust, the type of sauce, etc.

Lebanese pizza is very different from Italian pizza, which is very different from Italian American pizza.

My go to is Lebanese, and the city I live in is known for its best pizza places being Lebanese and the crust is very different. It's often very chewy and flavourful. You can just eat the crust plain, so keeping the toppings simple is best, because too many toppings becomes overpowering. It takes it's inspiration from Lebanese flat bread, which typically has very simple toppings, and is a lot like a tiny pizza.

A lot of pizzas have very bland crusts that allow the ingredients to be highlighted, and you can get really creative and focus on toppings.

As someone else mentioned, traditional Italian pizza has very little cheese, and usually very fresh toppings. I've had some great Italian pizza, but it's not what I crave when I want pizza.

When I crave pizza I want heavy, greasy, cheesy, chewy face-stuffing pizza, lol.

One thousand percent agree. St. Louis style pizza is a crime against humanity, and provel cheese needs to be outlawed.

A guy I used to work with would visit St. Louis from Boston periodically. He finally made a PowerPoint deck detailing how/why Provel is not actually cheese. It doesn't qualify...I forget the details.

I literally know nothing about this place and am now vaguely fascinated by how ridiculous it sounds.

Granted, I'm currently living in a similar place where much of the food is absolutely atrocious, especially the pizza, and yet the locals absolutely love it.

For some godforsaken reason, the only spice they use here is savoury.

I went to boarding school in St. Louis and loved it, granted I was there on an all expenses paid basketball scholarship and it was in a very rich area of St. Louis, and I rarely left campus unless it was to starbucks down the street, but we went to the City Museum that had a giant airplane for our grad. I enjoyed my experience and the sun sets were great. Can't remember the St. Louis pizza though. We always got Domino's or Papa Johns in the dorm.

Note to self: apparently, I am not using nearly enough sauce on my home made pizza.

Also, someone noted that Costco cheese pizza has more calories than pepperoni. That's because they use more cheese on the cheese pizza. In the video, you can see he's making a half cheese/half pepperoni order. The cheese side has twice as much cheese.

Here in Italy, you can get pizza without cheese in most pizzerie.  My vegan friend usually gets that.  There are also lots of options for pizza without tomato but with cheese (pizza bianca). 

I've never seen pizza with less cheese though.  Usually your choice on the menu here is with mozzarella or without - no option for 'less mozzarella' although i'm sure you could ask the pizza chef to put less cheese on if you spoke to him.

And pizza in Naples is the best in the world.  Nectar of the Gods.  And the most classic Naples pizza is as pictured - margherita ie. tomato, mozzarella and a leaf of fresh basil.

Everyone knows the only people who need cheese pizza are children, and you can't go dumping a GREEN VEGETABLE like oregano on it without it ceasing to be a cheese pizza.

Well, that's why it's famous! It's not just their base pizza without pepperoni (or without the supreme ingredients).  It has extra cheese on it.

I never really used to consider cheese pizza as a choice when ordering pizza but IMO it is the best slice that Costco offers.  I still don't order cheese pizza elsewhere but I will get the cheese slice a few times a year at Costco.

Pizza toppings are deeply personal.  I prefer a lightly sauced pie myself.    Sarah Minnock doesn't use any sauce at all and she is one of the best pizzaiolos in the country.

Sounds good!

My favorite is baked ziti pizza. A local Italian restaurant makes it, and I usually buy two at a time and freeze the individual slices. One slice is perfect for a weekday lunch, and two is just right after a 1500+ calorie bike ride on the weekends.
