Asset Allocation to Simulate VTSAX

What percentage of each one would I have to put into to match VTSAX as close as possible.....with these being my options...

Fixed Income (Low Risk)
Vanguard Intermediate Bd Index VBIUX
Balanced Fund
Socially Responsible Stock
Vanguard Inst Index Plus VIIIX
Stock Fund
Vanguard Extended Market VEMPX
Van All World Ex-US Index VFWSX

But don't forget that these have no international stocks.

This is correct. Do this if you really want to be precise about matching VTSAX. However if you like to keep things simple, be aware that VIIIX and VTSAX have basically identical performance. If the amount of money we're talking about here isn't that much, going with only VIIIX for your US stock allocation is very defensible.
