What can I do with mulberries?

DH has just clocked a LADEN mulberry tree in the garden that no one is picking! The fruits are falling to the ground in handfuls. However, before I go out picking I'd like some ideas as to what to do with them! Jam is out (we still have five of the six jars of blackberry jam I made last year - turns out we don't eat much jam!) and we don't have much freezer space. I'd love some way of preserving them, but am also open to cooking ideas (especially non-baking ones). And I was wondering about cordial.

DH makes fruit salads weekly during this time of year. He throws in mulberries from a tree down the street.

If you aren't going to make jam or freeze them, I don't know how you are going to preserve them. I suppose you could can them.

But just enjoy them in desserts for a while.

Replace blackberries with mulberries in any recipe. Mulberry pie, Mulberry muffins (try  replacing blueberries in a muffin recipe), Mulberry wine, mulberry syrup, mulberry cordial...

You could also dehydrate them and use them like raisins or dried cranberries.

If you have a dehydrator, make fruit leather.

I usually just pick the berries and eat them, as they ripen, so I get at most 2 dozen a day.

But if the tree's full of ripe berries, I've heard you can just lay out a sheet or canvas underneath the tree and just shake the fruit off and collect it a bit faster than hand-picking.

If I tried to pick the ones on our tree, the birds might attack me.

Not really, but they do love those berries.  I just eat them, with no thought for the future.  The same as the birds.

I'll second Mulberry wine.  I haven't tried it, but I've heard excellent things.

You'll need 4-5lbs per gallon of wine, and a bit of equipment.  Completely worth it.

I freeze ours and then throw them into smoothies with other berries.

Can them as instant pie or cobbler filling for future!

Open a jar, top with crumble or pastry and bake.

A) Jam. Equal parts mulberries and apples, boil in enough water to cover, when pulpy add sugar to the same weight as total fruit, boil until starting to set.

B) Booze. Blackberry wine recipe, substitute mulberries, leave to age for at least 6 months. I don't know how this is going to turn out since my first batch is only just finished aging.

I've gone for a winter spiced mulberry and apple jelly, intended for eating with cheese, because I have a friend who wants to learn to make jam and jelly and I thought this would be a Good opportunity.
