refinishing kitchen cabinets

our kitchen cabinets are in need of some tlc. they are maple i believe and they need a new coat of varnish. after a cleaning and light sanding what's the best way to refinish them? water based polyurethane? brushed on or sprayed? i want it to like like it wasn't me that did it, in other words i want it to look nice.

Miniwax makes a product called Polyshades that's stain + poly in one.  You can brush it on over top of stained wood, so it makes a great repair/top coat.  I used it on a friend's scratched/scuffed cabinets in a couple places and it looked like new.
