Kitchen backsplash full wall or half wall?

I am finishing my kitchen remodel and the tile basksplash is the last thing to do. I am struggling to decide if I should run the tile all the way up on the oven/range wall or only go up to the range hood and the first floating shelf.

I am also wondering if I should tile above the sink to the bottom of the cabinets as well as the far wall with the glass cabinets.

Should it all have tile on it or would that be too much tile? Same question with the range/oven wall, can there be such a thing as too much?

I think this really depends on the tile you have selected. With the open shelving, and a really busy/patterned tile, it might be too much, but if its subtle, then running all the way up could look really nice.

Can you add some photos of the tile, maybe leaning up against the wall to help us get a better idea of what the finished product will look like?

+1 to the tile you have selected.  I personally like the look of taking the tile all the way to the ceiling, but that will make it very much an 'accent wall'  - which you may or may not enjoy. 

It's also more expensive to tile the whole thing and adds a few more hours of work (assuming you are doing it yourself)?  But that might be ~$200-300 more in materials on that small of a space.

Do you have a GFCI on the same circuit as those outlets?  If it's being inspected you will probably be required to... and it's a PITA to have the inspector come back a second time (ask me how I know!)

I am still in the process of choosing tile but I am leaning towards one that has a bit of texture and some beige/cream colors since the floor is white and the countertops will be an off white.

This is one tile I have in mind https://www.tilebar.com/montauk-sand-dune-2x8-ceramic-wall-subway-tile.html and I would be installing it on a 1/3 offset, running the tiles horizontally.

The countertops are being installed this Friday and they are Ethereal Glow Silestone https://www.cosentino.com/usa/colors/silestone/ethereal-glow/

The outlets are on a GFCI breaker and it is not being inspected.

Yes I am doing it myself.

An FYI on TileBar: Home Depot sells the same tile under one of its own in-house labels (Ivy Hill Tile), and I've found that about half the time it's cheaper to buy from Home Depot (plus the shipping is free). I'm pretty sure this is the same tile: https://www.homedepot.com/p/Ivy-Hill-Tile-Amagansett-Sand-Dune-Cream-2-in-x-8-in-Mixed-Finish-Ceramic-Subway-Wall-Tile-5-38-sq-ft-case-EXT3RD101872/306804562#overlay Amagansett is right down the road from Montauk, so  their dunes should be the same color.

For some reason, getting samples is faster from TileBar, but getting the actual tile is easier from Home Depot.

I'm usually Team Up The Wall.

I have different question: should you tire of the open shelving and want to do something different, what would you do? Let that answer dictate how you proceed with the backsplash.

I think I'd go to the ceiling on the stove/hood wall since it's self contained.
For the other walls that are shared with the rest of the room, I think that I'd stop at the bottom of the cabinets or lowest open shelf

I think that wall would look odd if it wasn't tiled completely.

For me, besides the kind of tile, a major factor is always expense as many tile these days is quite expensive. Perhaps get a quote first if you haven't already. That might make the decision easier to make.

FWIW, our backsplash goes from the stove surface all the way to the ceiling. If I remember, it just about doubled the cost of our backsplash project. In our bathrooms, we only have a four or five inch backsplash comprised of solid stone. It would have increased the cost by a factor of several times to continue it up to the base of our cabinet and IMO, didn't add much utility by doing so.
