how to record phone call interview in high quality?

We are trying to record a phone call interview, but we need both sides to be high quality. So each person will be using a high quality microphone, and the call may be done via skype (or whatever else you recommend).   

Afterwards, we need to combine the audio files and attach it together with simple editing, and maybe cutout any static or unwanted noise.

What will be the SIMPLEST way to accomplish this?

I found this link about some people who do it, but its got way too many choices (45 choices) and i cant figure out where to start, information overload;

Edited to add: I forgot to clarify, I only want AUDIO, do not want or need any video.

I would check out Zoom, when you record it records both audio and video, and there would be no worry about having to combine two separate audio files.

What is zoom, do they have a website?

https://zoom.us/ it is so much easier to use and better quality than skype even if you don't need the video (you can turn the video off) it' the way I would go.
