How to make our own instant-cook beans and soup kits?

I like dry instant-cook rice and soup kits (like the Goya brand) but they are usually too salty and of course it is stupid to pay that much for just some beans. In a perfect world, I would make my own food fresh always but frankly my life is kind of boom and bust, and sometimes I have lots of time to prep food and sometimes I have little time to cook, so would rather work from a convenience food.

When I pre-cook beans at home, I can freeze them, but that takes up freezer space.  Is there a technique to pre-cook or pre-soak beans then re-dry them again?

Never done instant rice but I do pressure can soup beans all the time for quick meals. Since most of the cooking is done in the pressure canning, all you have to do is open the jar, heat and eat. I throw in seasoning and chunks of pork as well for flavoring.

Thanks, Cgbg! That's EXACTLY what I was looking for! Will try it out with my solar oven when the time is right.

lthenderson, that sounds like yet another reason for me to get a pressure canner when a chance to get a free one presents itself. Thank you!
