Economical DIY Nitro Cold Brew as Stout Substitute?

Good day folks,

Back in 2012 I found that a number of my worsening health conditions were due to chronic inflammation greatly driven by food allergies and intolerance.

As part of this cleanup imperial stouts (well, all grain based beverages), had to be cut.

About 2 years ago my local artsy cafe began selling a Nitro cold brew coffee which has the traits I most miss from a good stout - bitters, head, thick body, smoothness, nitrogen tingle, etc.  (some of the kid's I coach have giving me gift cards here knowing that I am a coffee lover)

Alas, at $5/glass I am unwilling to buy more than 1 (or occasionally 2) a month out of my personal spending budget.

Given that I am used to allocating $0.25/day on coffee - I would really like to leverage this blessed beverage at home at scale.

From what I am seeing, all I need to do is add nitrogen to cold brew.

Cold brew is easy, corse grind beans, soak in nut-milk bag overnight using distilled water.  Remove bag.

Now, small batch kits exist but they are bloody expensive  so that is a show stopper.

Yikes, the convenience would be nice... but too expensive.  Far too expensive.


1 - Any other thoughts for a frugal per/cup cost with relatively low upfront setup balance?
2 - would room temp storage be a concern for bacterial blooms?   (I eat a lot of fermented foods, yummo)
